According to the U.S. Department of Health and Human Services (2010) there is a significant disparity in life expectance rates between Caucasian males and ethnic minority males in the United States, resulting from factors that include nutrition. While the employment outlook for dietitians and nutritionists is expected to grow by 9.24% through 2018, to approximately 65,000, the percentage of self-employed professionals within the sector is expected to decrease slightly from 8.81% to 8.49% (Bureau of Labor Statistics, 2010).

The objective of this research was to identify specific factors that contribute to underrepresented minority (African American, Hispanic, Native American) undergraduate students‟ success in STEM disciplines at a regional university during the 2007-2010 timeframe. As more underrepresented minority (URM) students complete STEM degrees, many will possess the skills to become part of the domestic human capital needed to meet U. S. workforce demands and enhance the nation‟s STEM innovation. Community colleges are attracting many first generation minority students. A question often asked is how can a college, faculty, and staff promote student achievement, particularly to underrepresented groups? One of the courses required at a South Texas community college, serving a predominately Hispanic population, is a College Success Course. Courses such as these are designed to facilitate students in developing the necessary skills/a college.
