Dietary Intake And Influence Of Nutrition Education For Selected Elderly In The Congregate Meals Program, Grace E. Anderson

Electronic Theses and Dissertations

Nationally, the elderly know fewer facts about nutrition as compared to younger people (41). Senior citizens have relatively poor diets and many are at nutritional risk. The Congregate Meals Program (CMP) provides one low-cost meal a day, five days a week for participants over 60 years of age and their spouses. In accordance …

An Evaluation Of Protein Quality Of Kitt, Era And Rall Wheats By The Protein Efficiency Ratio Method, Lorna Jost

Electronic Theses and Dissertations

Studies were conducted to evaluate the nutritive value of three wheat cultivars produced at South Dakota State University. The three wheats were Kitt, Era and Rall. Crude protein analysis by the Kjeldahl method, amino acid content and a biological assay were conducted on all three wheat flours. Kjeldahl analysis yielded the following percentage proteins for Kitt, Era and Rall respectively; 18.1, 13.7, and 11.9. Lysine was the first limiting amino acid for rats in all three cultivars under investigation. Diets consisting of four protein levels of each wheat flour, four protein levels of casein control diet and one protein level …

Effectiveness Of A Curriculum To Change Attitudes Of Adolescents Toward The Aged, Dorothy Jean Zuiderhof

Electronic Theses and Dissertations

The primary purpose of the present study was to develop a two-week curriculum entitled Design for Dignity. The curriculum was to stimulate the student to think about aging and to improve his attitudes toward aging and the aged. More specifically, the instructional unit attempted to (1) provide accurate information about the aging process and sensitize the students to the needs of those who are presently elderly, and (2) help the students realize that they are patterning their own old age. The area of the older person was a suitable area in which to develop a curriculum as few available resources …
