A growing amount of research exists on environmental education programs which incorporates the viewpoints of students into its assessment of the program’s efficacy. This research seeks to add to that body and evaluate an environmental education program about the sustainability of plastics, using both quantitative and qualitative data collected from participating students. The data was collected after a 90-minute instructional block of demonstration-based environmental education meant to inform students on the variability of plastics’ properties and the sorting and remolding processes of recycling. Evidence suggests environmental education can correlate with both short- and long-term behavioral changes, but existing research on the effectiveness of popular environmental education tactics show mixed results. Qualitative research was used in this study to assess student engagement and behavioral change within the context of environmental education campaigns. Ideally, students exposed to environmental campaigns become more informed on environmental issues and adjust their behavior to align with the campaign’s objectives. However, only a portion of environmental campaigns have these desired effects on their students. Extension can play a key role in providing food waste education nation-wide. This study is the first to evaluate the effects of environmentally focused lesson plans on elementary student knowledge and perceptions regarding food waste. Herein we provide suggestions on concepts to teach students for the greatest impact on food waste reduction. We also provide avenues to incorporate food waste education into existing Extension programming. We hope the study can inspire and inform further food waste program development, assessment, and implementation through Extension.

This grounded theory action research study examines the impact of a graduate sustainability leadership program through the lens of its alumni. The study reveals elements of the leadership program that had the most impact on the lives and careers of its alumni, as well as suggestions for how the program could better prepare students in the future. This study finds that impactful sustainability leadership programs might incorporate opportunities for: paradigm and perspective shifts; a culture of support and care; holistic personal growth and development; experiential community-based learning opportunities; and leadership tools and skills that students can practice and use. As cities expand globally, researchers must clarify how human activities and institutions shape biodiversity and conversely, how ecological processes shape human outcomes. Two features of contemporary cities motivate this thesis. First, urban residents, and especially children, are spending less time in nature and consequently, miss out on healthy and formative experiences with biodiversity. Second, residents with the least access to biodiversity tend to be those with the lowest socioeconomic status (SES). Research regarding outdoor environmental education programs for youth tends to be quantitative in nature, examining cause-and-effect relationships between program content and participants’ behavior and attitudes. Some researchers have suggested that programs that help foster an affective connection with nature in its participants may have more lasting and greater impact on participants’ pro-environmental behavior and attitudes than those that take a more cognitive approach. Several studies have investigated the impact of course composition in terms of gender as well as socioeconomic diversity; however, the research studies about course composition and gender were limited to differences between single gender and coed groups. A case study was organized at a K-5 elementary school in Lincoln, Nebraksa. This school is Saratoga Elementary School and is a United States Title I Distinguished School1 under No Child Left Behind. It has a population of 266 students, with 47% being minority, 1% gifted, and 28% special education (LPS School Profile Brochure). 80% of the student population is eligible for free/reduced meals, implying that it’s a school with a lower socioeconomic status. This study was conducted to determine the change, and the factors influencing the change, in the participant’s affinity for nature resulting from an environmental education experience.
