This capstone project aimed to highlight the importance of nutrition education in early childhood. I chose this topic because studies have shown a steady increase over the years in children’s diet-related illnesses (Baker & Bjerregaard, 2023). Many factors have contributed to this increase such as media and marketing. Companies use their marketing strategies to target the interests of children and persuade them to desire their unhealthy products (Taillie et al., 2019). This capstone project focuses on increasing social-emotional development of 5- to 7-year-old children. Social-emotional learning (SEL) is a methodology that helps students of all ages better comprehend their emotions, feel emotions to the fullest extent, and demonstrate empathy for others. These learned behaviors are then used to help students make positive, responsible decisions, create frameworks to achieve their goals and build positive relationships with others. The increasing focus on literacy development and kindergarten readiness in preschool has created a lack of science education in early childhood education. In recent research, Head Start found that of the four academic readiness domains for preschoolers (i.e., language, literacy, math, and science), science is the lowest-performing area amongst students in their program (Bustamante, White, & Greenfield, 2018). Many preschoolers may not yet be able to identify how they feel and be able to regulate their emotions. These children can experience a hard time expressing their feelings and engage in emotional outbursts that are detrimental to their goals, which also challenge their caregivers. To address this problem among preschoolers, I have created a three-day lesson plan on emotion regulation for children at the Marina Child Development Center in Marina, California.
