Our understanding of the science of anthropogenic climate change and its immediate and indirect impacts has grown within the last decade.Alongside anincrease in concern for the inequities within the industrialized food system, climate change is impacting agriculture and the communities that depend on it in myriad ways. These challenges have catalyzed investment in sustainable agriculture, “eat local” food movements, and rethinking of all aspects of food systems, including consumers, producers, retailers, and distributors. This dissertation investigates two important issues in agricultural commodity processing: (i) biomass commercialization; that is, converting organic waste into a saleable product, from economic and environmental perspectives, and (ii) optimal procurement portfolio design using multiple suppliers and spot market, and the impact of by-product introduction on this optimal portfolio.

The first chapter examines the economic implications of biomass commercialization from the perspective of an agri-processor that uses a commodity input to produce both a commodity output and biomass. The purpose of this study was to describe agricultural information sources available to farmers and to describe food access and availability for the people of Dangriga, Stann Creek, Belize. This study used descriptive survey research methods with convenience sampling of the general public (n=22) and of farmers (n = 38) in the summer of 2017. Farmers use a variety of agricultural information sources with the extension service cited most often, followed by friends and fellow farmers. The increasing rate and effects of sea level rise is a major environmental concern in the Chesapeake Bay. This paper evaluates the impacts of rising sea level on coastal salt marshes and the surrounding agricultural lands at risk in Dorchester County, Maryland to build off existing environmental monitoring work performed by NOAA’s Sentinel Site Program. The results of the spatial analysis were used to estimate monetary benefits to incentivize farmers to protect these marshes by making their land available for marsh migration to occur.
