In early 2019 the Dublin Gastronomy Symposium Organising Committee settled on the theme of ‘Food and Disruption’ for its fifth biennial conference in May 2020. Little did the committee suspect how prescient this title would be as the descriptor of what was to happen during the Covid-19 pandemic that descended upon the global community right in the run-up to the conference. The lockdown instigated across many countries in March 2020 led to an early decision to take the Dublin Gastronomy Symposium 2020 online. What does an empty square mean for the future of a rural community? This question has been buzzing in my head since spring 2020 when my country, Italy, entered its first lockdown period due to the Covid-19 pandemic. I am an economic anthropologist. Since the mid-2000s my research has focused on the development of local communities in rural areas of Italy. Specifically, I have been investigating the role played by folk food festivals, the so-called sagre, using ethnographic research in north-western Italy, an area often studied by anthropologists to understand the transformations of the relationship between urban and rural centres, …

The shift from service à la Française to service à la Russe that took place between 1850 and 1880 changed Victorian sociability and the Victorian dinner table. In the former style of service all the dishes were put on the table and then carved by the host; in the latter most of the dishes were placed not on the table but upon a sideboard and from there handed to guests individually by the servants. This research note introduces the methodology of the FoodCult Project, with the aim of stimulating discussion regarding the interdisciplinary potential for historical food studies. The project represents the first major attempt to establish both the fundamentals of everyday diet, and the cultural ‘meaning’ of food and drink in early modern Ireland, c 1550-1650. This was a period of major economic development, unprecedented intercultural contact, but also of conquest, colonisation and war, and the study focusses on Ireland as a case-study for understanding the role of food in a complex society. Tinned Sardines And Putrefied Yellow-Fin In Equatorial Guinea: Regimes Of Food In The Novels Of Donato Ndongo-Bidyogo, Igor Cusack

In his semi-autobiographical novels, Las tinieblas de su memoria negra (Shadows of your black memory) and Los poderes de la tempestad (Power of the storm), the Equatoguinean writer Donato Ndongo-Bidyogo describes a boy’s, and then the man’s, life in colonial and postcolonial Equatorial Guinea, Spain’s only sub-Saharan colony. This paper argues that the numerous descriptions of the food encountered by the protagonist immerse the reader in four different worlds: that of his Fang ethnic group in the Hispanic colony; that of the colonial priests and emancipados of the protagonist’s youth; then the horrors encountered under the cruel postcolonial tyrant, Macías …

Iranian people have a rich and significant history of nomadism and are still in contact with this ancient practice. The purpose of this research is to investigate and evaluate the Iranian nomads’ culture from a touristic and aesthetic viewpoint. The literature shows that well-known cultural tourist attractions possess particular characteristics to become a successful and sustainable product / destination. In this paper, we argue that Iranian pastoral nomads, from a geographical, social, cultural, and artistic perspective, have numerous peculiar characteristics which are attractive to international tourists. A UNESCO world heritage site since 1983, the Taj Mahal, located in the city of Agra in India is an important contributor to tourism in India. In the year 2018 alone, approximately 280 million tourists visited the monument. However, the popularity of the site has several negative impacts such as yellowing of the structure, pollution and overcrowding which endangers this built cultural heritage. Due to this, the Archaeological Survey of India (ASI), which is the national authority entrusted with managing heritage sites, has initiated steps to check overcrowding in the Taj Mahal. Reflections On How The Covid-19 Pandemic Can Change Tour Guiding, Luis Miguel Brito, Cristina Carvalho

This short editorial paper reflects on the Tour Guiding industry in 2020 and the impact of COVID-19. The paper suggests that while the pandemic and its associated lockdowns has devastated the tourism industry, it has also encouraged those working in the industry to be more innovative and imaginative in their business practices. While the impact of the virus is acknowledged, it is proposed that 2020 may be a turning point in redefining tourism in general and Tour Guiding in particular.

In the present neoliberal market economy, the so-called free tours and their unlicensed tourist guides found the perfect environment to practice their activity, which is often criticised by licensed guides. The overall difference between the two types of guides is related to the fact that licensed guides have a formal specific education and training to do their job, sometimes complemented with continuous professional development, whereas free tours’ guides don’t. Upon becoming Prime Minister, Theresa May installed industrial strategy as one of the principal planks of her economic policy. May's embrace of industrial strategy, with its tacit acceptance of a positive role for the state in steering and coordinating economic activity, initially appears to be a decisive break with an era dating back to Margaret Thatcher, in which government intervention was regarded as heresy. Whilst there are doubtless novel features, this article argues that continuity is the overriding theme of May's industrial strategy. António Lobo Antunes explores a forced encounter of a Portuguese diaspora with Africa for some settlers. He examines the nature of the bi-directional diaspora for “os retornados”, who, having returned to Portugal after independence of the colonies, found they were invisible in the eyes of Portugal, as portrayed in ‘O esplendor de Portugal’ and in ‘A história do hidroavião’. Luanda, Angola and Lisbon are depicted as spaces where each individual represents the reverse of the Portuguese colonial past. Antunes turns to historical facts as a source for a critical fiction. A metropolis such as Paris may provide a common ground for the experiences of migrants coming from Africa and Latin American. The traditional capital of Latin American literatures is also considered to be the greatest agglomeration of African immigrants mostly coming from former French colonies. This paper identifies and critiques a dominant narrative in the history of Irish television, which is too often passed off for, or accepted as, the history of television in Ireland. The his- tory of television in Ireland has been written within an institutional framework and depends on the cultural binary of tradition and modernity, ‘old Ireland’ and ‘new Ireland’. This dom- inant narrative fails to interrogate television as a medium. It provides an account of the Irish broadcaster RTÉ rather than an account of the arrival of a new medium. Re-Theorizing The “Structure–Agency” Relationship: Figurational Theory, Organizational Change And The Gaelic Athletic Association, John Connolly, Paddy Dolan

This article illustrates how the figurational sociology associated with Norbert Elias provides an alternative theoretical framework for explaining the relationship between, ‘individualorganization- society’ and organizational change, and in so doing transverses what is conceived as a false dichotomy between structure and agency. Through an historical case study of the Gaelic Athletic Association in Ireland, the ‘individual-organization-society’ relationship is conceptualized as overlapping figurations and organizational change is explained as figurational dynamics—the shifting social interdependencies between the individuals and groups comprising an organization, between that organization and other organizations, between social groups on a higher level of integration and competition. Actor-network theory is considered to have great potential for broadening and deepening our grasp of institutional work (Lawrence and Suddaby, 2006). Given its focus on process, ANT offers a means to breathe life into the practices associated with institutionalization. With Callon’s (1986) four moments of translation as analytical lens, and with Ireland’s Industrial Development Authority as empirical example, I seek to address the concerns in the call for papers to reconsider ‘the role of agency, power, persistence and change in the process of institutionalization.’
