Reducing Food Scarcity: The Benefits Of Urban Farming, S.A. Claudell, Emilio Mejia

Journal of Nonprofit Innovation

Urban farming can enhance the lives of communities and help reduce food scarcity. This paper presents a conceptual prototype of an efficient urban farming community that can be scaled for a single apartment building or an entire community across all global geoeconomics regions, including densely populated cities and rural, developing towns and communities. When deployed in coordination with smart crop choices, local farm support, and efficient transportation then the result isn’t just sustainability, but also increasing fresh produce accessibility, optimizing nutritional value, eliminating the use of ‘forever chemicals’, reducing transportation costs, and fostering global environmental benefits.

The architectural design of spaces offering food assistance has received little to no attention since food pantries emerged in the 1970s. Non-profit food initiatives are often sited quickly with limited resources, producing inadequate spaces unable to fully support a food insecure community, prioritize the experience of users, and create a sense of belonging. The current spaces limit services to merely food distribution. They do not take advantage of the opportunity to expand socioeconomic capital through the power of shared food experiences: growing, cooking, eating, and learning.

Alcohol abuse and peer pressure to drink are prominent issues on college campuses across the nation. More than 50 percent of college students aged 18 to 22 consume alcohol monthly and 33 percent consistently engage in binge drinking (National Institute on Alcohol Abuse and Alcoholism, 2021a). A non-alcoholic beverage product marketed to students as an alternative to alcohol in social settings could alleviate some of the negative impacts, such as peer pressure and the dangers caused by overconsumption.

Many colleges and universities offer students access to on-campus food pantries, yet very few students utilize these services despite reporting high rates of food insecurity. Considering the importance of a healthy diet on the developing minds of young adults, it is pertinent that colleges and universities find innovative ways to reach food insecure students. The purpose of this hybrid creative-research project was to creatively address commonly cited barriers of seeking food assistance (i.e., negative stigma, embarrassment, unknown location, awareness of resource, etc.) using public art. Today, while the number of stunted children is decreasing in all geographies, the progress is not consistent. Moreover, there is an increasing prevalence of overweight and obesity among children and adolescent. Globally, about half of all children under five do not receive essential nutrients, often unnoticed until too late. On the other end of the spectrum, the incidence of overweight and obesity in 5-19 year old has increased from 4% in 1975 to 18% in 2016 ¹. “How to be the Perfect Asian Wife” critiques exploitative power systems that assault female bodies of color in intersectional ways. This work explores strategies of healing and resistance through inserting one’s own narrative of flourishing rather than surviving, while reflecting violent realities. Three large drawings mimic pervasive advertisement language and presentation reflecting the oppressive strategies used to contain women of color. Created with charcoal, watercolor, and ink, these 'advertisements' contrast with an interactive rice bag filled with comics of my everyday experiences. These documentations compel viewers to reflect on their own participation in systems of power.

Growing up in Japan, balanced meals were always provided at home, at schools and even at restaurants. Unfortunately, children are not going to choose balanced meals from the start, so this habit has to be instilled by parents and by the educational system until it eventually becomes a personal preference for children. If children are simply given the choice to eat whatever they want from the beginning, it is unlikely that this preference will ever be developed. The emphasis of nurturing the habit of eating balanced meals, rather than just eating preferred foods, is what is particular about Japanese parenting. …
