This paper considers a large mural of “The Modern Woman” painted in France by the American artist Mary Cassatt for the Woman’s Building at the World’s Columbian Exposition in Chicago in 1893. It focuses in particular on the large central panel of the mural titled Young Women Plucking the Fruits of Knowledge or Science that depicts women and girls apple-picking. Cassatt’s mural drew on various traditions and myths. Apple harvesting was a common sight in America. In 2017, Marije Vogelzang's interactive performance at the Museum of Rotterdam, 'Black Confectti', was designed to enable the experience of a difficult wartime past. Using authentic recipes from the war press, she prepared dishes based on the creativity of the crisis. In the face of starvation and the struggle for life, the selflessness of creative action in the kitchen and the effort of documentation in the form of recipes from the past and culinary fantasies from the past proved to be a helpful tool for surviving the most oppressive situation. Urban farming can enhance the lives of communities and help reduce food scarcity. This paper presents a conceptual prototype of an efficient urban farming community that can be scaled for a single apartment building or an entire community across all global geoeconomics regions, including densely populated cities and rural, developing towns and communities. When deployed in coordination with smart crop choices, local farm support, and efficient transportation then the result isn’t just sustainability, but also increasing fresh produce accessibility, optimizing nutritional value, eliminating the use of ‘forever chemicals’, reducing transportation costs, and fostering global environmental benefits.

This paper examines cookbooks written by Black women from the mid eighteenth to late twentieth centuries. As cookbooks, these texts are practical and instructional, while also offering insights into the transnational development of food as an expression of cultural history through the Indigenous, African, and European influences evident within the cuisine. African Americans, and more specifically Black women, have contributed to the food history of the Southern United States by developing a distinct African American cuisine. The architectural design of spaces offering food assistance has received little to no attention since food pantries emerged in the 1970s. Non-profit food initiatives are often sited quickly with limited resources, producing inadequate spaces unable to fully support a food insecure community, prioritize the experience of users, and create a sense of belonging. The current spaces limit services to merely food distribution. They do not take advantage of the opportunity to expand socioeconomic capital through the power of shared food experiences: growing, cooking, eating, and learning.

My project uses traditional Chinese calligraphy culture and my own family stories to create five daily use products to help my user find a sense of belonging to Chinese culture and also introduce my culture and stories to all audiences.

As an international student who came to the US, I have often struggled with a lack of cultural identity and belonging. This is a common issue faced by many who choose to leave their homes and venture to new places. However, I believe that we can overcome this by creating products that generate an emotional connection with their users.

Alcohol abuse and peer pressure to drink are prominent issues on college campuses across the nation. More than 50 percent of college students aged 18 to 22 consume alcohol monthly and 33 percent consistently engage in binge drinking (National Institute on Alcohol Abuse and Alcoholism, 2021a). A non-alcoholic beverage product marketed to students as an alternative to alcohol in social settings could alleviate some of the negative impacts, such as peer pressure and the dangers caused by overconsumption.

Quarantining and Dining captures and reflects the many ways in which comfort is provided through food. The project content was collected through food culture research, interviews, and observation and then mediated through Instagram. Learning Outcome

To understand the impact sports nutrition knowledge has on the risk for developing LEA in Female Cross Country Runners.

Background

The International Olympic Committee introduced the concept of Relative Energy Deficiency in Sports (RED-S) to accurately encompass the condition previously known as the Female Athlete Triad. LEA is the root cause of RED-S. (Mountjoy et al., 2014). The purpose of this study was to measure sports nutrition knowledge and the impact knowledge level has on the susceptibility to develop LEA in female cross country runners.
