Yeast is a common byproduct of wine production. Wine yeast may be used as a food source. It does not contain bitter and astringent compounds such as those present in spent yeast from making beer The use of nutritional yeast and yeast extract for protein enrichment of bread are presented in this article.

However, early efforts to establish a wine industry in Southern Oregon were curtailed by the passage of the Volstead Act, initiating prohibition. Grapevines (Vitis species) are grown worldwide to produce table grapes, juice grapes, dried grapes, and wine with the United States as one of the world’s largest wine and grape producers. Though not a large contributor to the U.S. grape and wine industry, Arkansas’ industry plays an important role in the state’s agritourism and economy. Most grapes grown in Arkansas’ warm climate include native species, such as muscadines (V. rotundifolia) and hybrids (crosses of Vitis species). Objective:This study aimed to explore the effects of different concentrations of dissolved oxygen and free SO2 on the color and related parameters of Cabernet Sauvignon dry red wine during aging, and to provide basic data for enterprises to improve the aging process of Cabernet Sauvignon dry red wine.Methods:Cabernet Sauvignon dry red wine from Xinpuwang Wineyard in Shanshan County, Turpan, Xinjiang was used as the brewing material. Aiming at the problem of wine identification, the odor information of 7 kinds of wine was collected through the electronic nose, the LightGBM algorithm was used to learn the odor characteristics of the wine, and the TPE hyperparameter optimization algorithm is used to adaptively optimize the HyperGB parameter of the LightGBM algorithm. Verification is an indicator to evaluate the performance of the model. The experimental results showed that the discrimination model established by LightGBM had a 96.62% accuracy rate for wine samples, which was superior to traditional support vector machines, random forests, and neural networks. Grapevines (Vitis spp.) are one of the most widely-planted horticultural crops, and the United States plays a major role in grape and wine production. Arkansas has a long history of grape and wine production with grapes grown in Arkansas including mostly native species, such as muscadines, and hybrids (crosses of Vitis spp.), such as Chambourcin. In addition, the University of Arkansas System Division of Agriculture (UA System) grape breeding program has cultivars and selections that have shown potential for wine production. This report describes the impacts of climate and phenology on vintage for the North Willamette Valley in Oregon in 2019. A relatively mild early winter in 2018 was followed by a cold and wet second half of winter in 2019 and then a wet, but warm, spring. The growing season saw a few mild frosts during late April, but started off warmer than average, moderating through mid-vintage with fewer than average heat spikes. Near-record precipitation amounts during late June and early July brought increased disease pressure to the region. The vintage will be remembered for the early rains in September …
