Staple cereal crops provide the majority of nutrients to the world's population, and thus, can significantly impact human nutrition and health. Phenotypic and genetic diversity within a crop can be useful for biofortification and crop improvement, but quantitative phenotyping is needed to identify varieties with high or low concentrations of a nutrient of interest, and to identify alleles responsible for quantitative trait variation of the nutrient. Food Purchasing Habits Of Participants In The Supplemental Nutrition Assistance Program (Snap) Among Shelby County, Tennessee Residents, Michelle Ann Miller

The supplemental Nutrition Assistance Program (SNAP) is a government entitlement program that provides monetary assistance for participants to consistently acquire adequate food. Many unanswered questions remain regarding nutrition quality of SNAP purchases. Eighty-four SNAP participants were surveyed at food pantries throughout Shelby County, TN to obtain a descriptive analysis of participant purchasing habits. The majority of households received $150 or less per month in benefits, which were spent most frequently at convenience stores (n=42) and in bakeries/delis (n=44). 77% (n=65) of participants reported experiencing times while utilizing SNAP benefits where there was not enough food to feed his/her family. The purpose of this literature review is to determine the prevalence of nutrition-related conditions among children of migrant and seasonal farmworkers (MSFW) compared to national averages, as well as effectiveness of strategies for minimizing any health discrepancies. MSFW live under harsh conditions, engage in long hours of physically demanding labor, and receive insufficient income. Compounding demographic characteristics create insurmountable barriers to quality health care and nutrition education resulting in disproportionately unhealthy children within the MSFW population as compared to the greater US population. The prevalence of overweight, obesity, diabetes mellitus, cardiovascular disease, and numerous infections is higher among MSFW children. …

Numerous changes in school environment regarding nutrition have been implemented in Arkansas, but there is no means in place of testing nutrition curriculum effectiveness in terms of nutrition knowledge of students. Research trials were conducted to evaluate the effects of different levels of dietary grain sorghum on broiler live performance, carcass yield and shank (leg) and breast skin coloring. Iso-caloric diets were formulated where sorghum replaced corn at rates of 0% (control), 20, 40, 60, 80 and 100% for a total of 6 diets. For each of the two trials, 1500 Cobb 500 male broiler chicks were randomly allocated to 60 pens with 25 birds per pen (10 pens/diet) and grown to 46 days for the first research trial and 41 days for the second. Dietitians are expected to deliver sound and scientifically objective advice to the general public, yet their personal beliefs and behaviors could influence delivery of nutrition care. Increased understanding of the personal attitudes and behaviors of dietitians concerning eating behavior and body image could help improve dietetic practice. Traditional nutrition education emphasizes cognitive eating, i.e., monitoring energy intake and comparing macronutrient intakes to the current acceptable ranges. Intuitive eating, however, promotes the release of cognitive eating in favor of greater attention to physiologic cues, or “body wisdom”. Undernutrition is an underlying determinant of 45% of all childhood deaths annually, resulting in 3.1 million deaths to children less than five years globally (Black et al., 2013). Indices of white-tailed deer (Odocoileus virginianus) abundance in the western Upper Peninsula of Michigan suggested the population declined 40% from the previous 5 year mean following 2 consecutive severe winters in the mid-1990s and has not since increased in population size. I collected estimates and assessed biological and environmental covariates of survival and recruitment of fawns (< 1 year old) and age-specific reproductive and survival rates of adult females (> 1.6 years old) in the southwestern Upper Peninsula of Michigan from 2009–2011. Reproduction did not appear to regulate population growth, as 92 percent of females were pregnant. Annual survival of adult females was 70 percent across years, but poorer annual survival of fawns …

Abstract Elders living in long-term care facilities often experience weight loss. Weight loss in elders has been shown to increase their risk of death. Existing research has identified numerous factors associated with appetite and weight loss in elders. Dementia, depression, acute and chronic illness, and medications have all been identified as potential causes of decreased appetite and weight loss in elders. Farmers’ markets are increasingly promoted as mechanisms for improving access to healthful foods for low-income households, as they are relatively inexpensive to establish and they can provide affordable food for low-income households by offering Supplemental Nutrition Assistance Program Electronic Benefit Transfer (SNAP/EBT). SNAP/EBT at markets also expands revenue opportunities for participating farmers. Market mangers provide a critical role in overseeing SNAP/EBT at markets and influencing business opportunities for farmers. The objective of this study was to describe thoughts, knowledge, and dietary practices with regard to protein, and how these factors related to current recommendations among college-age males. A convenience sample of non-athlete college-age males (n=47), ages 18-24 years, completed 7 day dietary records (analyzed using NDSR), accelerometer assessments, anthropometric assessments (height, weight, waist circumference, and Bod Pod), and a brief semi-structured interview on protein knowledge and behaviors.

Background: Polycystic Ovarian Syndrome (PCOS) is an endocrine disorder, which if left untreated can lead to infertility and diabetes.

Objective: To determine whether women with PCOS who practice intuitive eating skills are more confident in sustaining healthy lifestyle changes.

Methods: A web-based survey was completed by 120 women with PCOS. Bivariate associations between the self-efficacy and intuitive eating scales was investigated using scatterplots, Pearson’s correlation coefficient, and a simple linear regression model. Ratings on the intuitive eating scale were dichotomized as high or low and self-efficacy ratings were compared.

Objective: To determine the impact of a nutrition education program on preschoolers’ snack choices when offered one healthy (grapes) or one unhealthy food (cookies).

Methods: This pre/post test experimental study included children ages 3-5 years old (n=45) from one preschool. Current research suggests that yoga practitioners are more mindful eaters, consume more fruits and vegetables and gain less weight over time when compared to individuals who do not practice yoga. This study aimed to determine the relationship between mindful eating habits and yoga practice in terms of how they are related to dietary quality. The circadian clock plays an essential role in most organisms by allowing their adaptation to the daily environmental changes mainly light/dark cycles and also temperature. Circadian rhythms persist in constant conditions indicating an auto regulatory molecular circadian clock. Here, we investigated the possibility that the circadian clock of Drosophila can also be entrained by scheduled feeding. Cycles of 12 hours feeding and 12 hours starvation could entrain the molecular circadian oscillation in key pacemaker neurons of Drosophila. The aims of this study were to characterize the gut, oral, and vaginal microbiotas of pregnant women with varying nutritional status and to determine if daily supplementation with probiotic yogurt containing Lactobacillus rhamnosus GR-1 and ground Moringa leaves, would ‘normalize’ the microbiota and improve pregnancy outcomes. For the latter, a clinical study was performed in Mwanza, Tanzania, in which consumption of yogurt for 88 ± 31 days, starting from the second trimester, did not result in excess weight gain, altered pregnancy outcomes or increased blood nutrient levels compared to an under-nourished group not taking the yogurt. How does early life rainfall impact later life human capital outcomes in Bangladesh? This paper examines the effect of exogenous rainfall shocks that occur during individuals early-life on later life health, wealth and education outcomes of Bangladeshi women born between 1952-1988. I link historical rainfall for each woman’s birth year and Demographic and Health Survey (DHS) cluster of birth with current outcomes from the 1999/2000, 2004 and 2007 survey rounds of the DHS. This study finds that rural women with 20% higher than mean rainfall in their year and cluster of birth are on average 0.24 cm taller and score …

Orofacial clefts (OFCs) are facial malformations that happen during early pregnancy and have a complex and heterogeneous etiology, involving both genetic and environmental risk factors. This project examined the association between maternal nutrition, folate-related biomarkers, candidate genes involved in one-carbon metabolism (OCM), and OFCs in order to achieve more comprehensive knowledge of how nutrition and genetics influence OFC risk.
