ABSTRACT

Three studies were conducted to evaluate how the broiler has changed over the years due to intense genetic selection. Four different broiler genotypes, one unselected since the 1950's (HER) representing the old meat-type bird and three current strains (Ross 308, Ross 708, and a test product (TY)) were studied. Differences in growth, morphometry, and response in performance and processing yield to different nutrient levels were studied.

Prune consumption has been associated with a decreased risk of colon cancer, yet there has been confusion as to which chemical component(s) of the prune are responsible for its anticarcinogenic properties. Previous studies have evaluated chlorogenic acid as a chemotherapeutic agent, however only a limited amount of studies have investigated neochlorogenic acid, the predominant phenolic compound found in the prune. Obesity has become a major nationwide health concern. Negative eating habits and lack of proper nutrition information were highlighted as major aspects of weight gain. This study was conducted in order to understand the relationship between nutritional knowledge and eating behaviors and their impact on the weight and obesity of college students. For this study, an instrument was designed that included survey questions regarding perception of healthy and unhealthy foods, personal consumption, and demographic factors. Nutrition knowledge has been shown to be increasingly critical in physician practice. Therefore, education has also become very critical. Medical schools have been working over the last few decades to include nutrition education in their curriculum, but due to many barriers, it is difficult to measure up to requirements.
