Interest in organic milk is increasing. By USDA Certified Organic standards, animals must be fed on pasture for a minimum of 120 days. Research indicates that various factors such as diet impact the nutritional quality and composition of milk. The objective of this study was to understand how feeding practices affected bovine plasma carotenoid concentrations over time. Plasma samples were collected from 9 cows fed on pasture at an organic dairy and from 9 cows fed total mixed ration (TMR) at a conventional dairy. This research uses data from the 2003-2006 National Health and Nutrition Examination Survey (NHANES) to determine dietary and other factors associated with serum 25(OH)-Vitamin D concentration for 5,474 adults age 20 years and older. After multivariate adjustment, we found that serum 25(OH)-Vitamin D concentration was positively associated with diets high in fruits, vegetables, and lean meats, while diets high in processed foods and high-fat meats were inversely associated with vitamin D level. Serum 25(OH)-Vitamin D concentration was also signifi-cantly associated with age, gender, race/ethnicity, BMI, physical activity, supplementation, and the season of survey administration. Background: Self-identity predicts healthy eating behaviors and intentions above and beyond Theory of Planned Behavior components (TPB; i.e., attitudes, perceived behavioral control, and subjective norms), but interventions exploring the relationship between self-identity and motivation are limited. Self-as-doer identity may be an important point of intervention for healthy eating behaviors (Houser-Marko & Sheldon, 2006). Therefore, I investigated whether the experimental manipulation of a self-as-doer identity predicted improved healthy food consumption, intentions, and increased self-identity as a healthy eater compared to women who received nutritional education or no intervention directly following the intervention and one month post-intervention.

Three studies were conducted to evaluate how the broiler has changed over the years due to intense genetic selection. Four different broiler genotypes, one unselected since the 1950's (HER) representing the old meat-type bird and three current strains (Ross 308, Ross 708, and a test product (TY)) were studied. Differences in growth, morphometry, and response in performance and processing yield to different nutrient levels were studied.

It is recommended that children and adolescents participate in > 60 minutes of moderate-to-vigorous physical activity (MVPA) per day. Despite the current recommendations and positive health benefits, many children and adolescents still do not engage in regular physical activity (PA).
One challenge for assisting children in becoming more active is sedentary screen-based activities (SBAs), such as watching television (TV), using computers, and playing sedentary video games (VGs), as SBAs may compete with time for being physically active in children. Objective: Lifestyle interventions that target diet and physical activity have been shown to reduce the development of Type 2 diabetes (T2DM) in individuals at risk; however, accessible and effective community-based prevention programs remain lacking. The purpose of this study was to assess the impact of PREPARE, a group lifestyle behaviour change program in adults with prediabetes.

Vitamin D and calcium play major roles in our bone health in addition to roles in tissues and cells. These roles in tissues and cells are associated with some cancers. The purpose of this study was to determine attitudes of cancer patients towards their dietary intakes of vitamin D and calcium. A questionnaire was completed by 128 volunteers (mean age=53.5 years±16.6, 94 women, 34 men) from the Montgomery Cancer Clinic in Montgomery, Alabama. Cancer-reporting participants (n=59) were likely to agree more (p=0.048) to the statement, “I try to eat healthy every day” compared to non-cancer reporting participants (n=69) on a …

Purpose: The purpose of this study was to explore public awareness and knowledge of gluten and the Gluten-Free Diet (GFD) with the intent to discover a difference between knowledge of gluten and related topics, and willingness to engage in the GFD fad. (2) Incorporate acquired knowledge into nutrition counseling modules for undergraduate dietetic students to provide increased practice working with real life situations
Intervention: Five modules were created for undergraduate students to better develop their nutrition counseling skills. The modules give students a way to practice counseling theories, methods, and techniques while working with virtual patients in a controlled environment. The Effects Of 1,25-Dihydroxyvitamin D3, Docosahexaenoic Acid And 5-Fluorouracil On Human Breast Cancer Cells, Liv Astri Engelsen

It is well documented that vitamin D and DHA have antiproliferative effects on a variety of human cancers, including breast cancer. Studies have shown that a combination approach to cancer treatment is more effective than any one treatment administered alone. In this study, human mammary epithelial cells from the MCF-7 cell line were treated with 25 μM DHA, 1 μM calcitriol, and 15 μM 5-Fluorourocil alone and in multiple combinations for 72 hours. Both DHA and 5-Fluorouracil slowed growth significantly (p < 0.05). In contrast, vitamin D did not inhibit cell growth at 1 μM. The combination of vitamin D and DHA inhibited cell growth slightly more than DHA alone. Interestingly, DHA was just as effective as 5-Fluorouracil at inhibiting cell growth. These results suggest that DHA may be just as efficacious as 5-Fluorouracil in slowing breast cancer progression and therefore may suggest a dietary approach to breast cancer treatment with low toxicity.

Obesity has become a major nationwide health concern. Negative eating habits and lack of proper nutrition information were highlighted as major aspects of weight gain. This study was conducted in order to understand the relationship between nutritional knowledge and eating behaviors and their impact on the weight and obesity of college students. For this study, an instrument was designed that included survey questions regarding perception of healthy and unhealthy foods, personal consumption, and demographic factors. Justification: The lungs are constantly exposed to oxidative stress and inflammation which increase the risk of lung damage. Each year approximately 73,000 refugees are resettled into the United States because it is unsafe for them to return to their country of origin. Resettlement agencies help refugees learn about their new environment and provide assistance with housing, food, English classes, and job skills training. The goal of resettlement programs is to help refugees become self-sufficient as quickly as possible.
Recently resettled refugees face many challenges that make it difficult to eat healthy food. Transportation, English skills, and conflicting work hours are some of the barriers to receiving nutrition education. This research evaluated the integration of nutrition lessons into English …

This study was designed to assess the knowledge and attitudes of collegiate freshmen regarding nutrition principles and nutritional guidelines. Participants in this study were 73 first semester students at Clemson University. A questionnaire on nutrition knowledge and attitudes was distributed during the fall semester of 2010. The participants self-reported both height and weight.
The mean score on the knowledge questions was 12.25 points (SD= 2.73), or 49% correct responses. The mean score of the attitude questions was 5.92 points (SD= 1.50), or 65.7% correct responses. There was no significant difference in averages in knowledge and attitudes by gender, (P= .138) …

Research has shown that peers influence each other in social situations. With childhood obesity becoming more prevalent in society, studying the influence peers have on their friends eating behaviors is important. National campaigns and laws have been promoted for the changing of food standards in schools but not recreation programs. Through direct observations of the foods children choose while amongst friends, the degree to which peers influence other children during a mealtime setting at camp is analyzed.
