The US and Japanese populations do not meet recommended DF intakes. This study indicated the relationship between the variety of vegetables available in markets and vegetable consumption in the US and Japan. The number of vegetables available in markets was determined using online resources from five markets in each country. Mean number of vegetable products in the US was 104.4 products (SD: ±36.8) and mean number of vegetable products in the Japanese markets was 120.2 products (SD: ±15.6). There was no significant relationship between the variety of vegetables in markets and vegetable consumption between the US and Japan. This study …

Perceptions Of Food, Supportive Resistance Resources, And Nutrition Knowledge Of Bariatric Surgery Patients, Savannah K. Walker

Adult overweight and obesity is a life-threatening health concern worldwide. Bariatric surgery is a successful treatment for severely obese individuals however, there is a moderate risk for weight regain. This study evaluated perception of food, supportive resistance resources, and nutrition knowledge, which play important roles in successful weight loss post bariatric surgery. Participants completed a three-part questionnaire at three time intervals: prior to surgery, 2 months post-surgery, and 5 months post-surgery. Results show that bariatric patients’ eating behavior significantly changes post bariatric surgery, but a disordered perception of food remains. Regular consumption of dairy is thought to aid in preserving lean body mass while decreasing body fat, however, studies have reported inconsistent results. The overall aim of this cross-sectional study was to examine the influence of dairy consumption on body composition, specifically body fat percentage, among college-aged individuals in Mississippi. Total dairy consumption, type of dairy, and the relationship between race and sex were examined in 580 participants aged 18-26 years. Healthy eating in childhood and adolescence is important for proper growth and development and to help prevent chronic diseases. Many factors contribute to healthy eating patterns, and one of the most influential factors is the home and school environment. Both settings have role models who may affect a child’s eating behaviors. This study consisted of 54 home school and 21 public school participants who lived in northeast Mississippi and were between 6-12 years old. Public school children consumed significantly more total calories, net carbohydrates, vitamin C, and calcium compared to the home school children. Also, the public school children consumed …
