Food insecurity is a known health equity threat for formerly chronically homeless populations even after they transition into permanent housing. This project utilized a human-centered design methodology to plan and implement a nutrition-focused community-health-worker (CHW) intervention in permanent supportive housing (PSH). The project aimed to increase access to healthy foods, improve nutritional literacy, healthy cooking/eating practices, and build community/social connectedness among 140 PSH residents. Validated food-security screening conducted by CHWs identified low or very low food security among 64% of 83 residents who completed the baseline survey, which is similar to rates found in a previous study among formerly homeless …

INTRODUCTION: We studied the replication and generalization of previously identified metabolites potentially associated with global cognitive function in multiple race/ethnicities and assessed the contribution of diet to these associations.
METHODS: We tested metabolite-cognitive function associations in U.S.A. Hispanic/Latino adults (n = 2222) from the Community Health Study/ Study of Latinos (HCHS/SOL) and in European (n = 1365) and African (n = 478) Americans from the Atherosclerosis Risk In Communities (ARIC) Study. We applied Mendelian Randomization (MR) analyses to assess causal associations between the metabolites and cognitive function and between Mediterranean diet and cognitive function.
RESULTS: Six metabolites were consistently associated …

Honors Theses
This creative project was created to serve as a 10-week afterschool club curriculum for 3rd-5th graders to teach them about nutrition and healthy eating patterns. The goal of the program is to help kids establish a foundation for healthy eating that they can utilize throughout their lives, potentially reducing their risk of developing chronic diseases as an adult. Information presented during the program is a representation of the key components of the USDA MyPlate and the 2020-2025 Dietary Guidelines for Americans. The curriculum aims to teach these concepts by breaking down the different food groups, reading nutrition facts labels, and …

Impaired mobility is the most common form of functional disability in the US, affecting one out of every sixteen working-age adults. Little is known about the barriers to and facilitators of healthy eating among people with impaired mobility (PWIM), who are at increased risk for diet-related chronic disease. The pathways by which impaired mobility influence dietary intake are unclear, yet likely involve a complex interplay between structural determinants of health and individual factors. To help advance nutrition equity initiatives for PWIM, this systematic review aimed to qualitatively synthesize factors associated with dietary intake across four levels of ecologic influence. An …

Hotel wellness programs have been recognized by businesses and societies fostering wellness among individuals. Sometimes, responding to higher costs and enhancing corporate social responsibility for these programs have grown well in popularity (Torres & Zhang, 2021). Most hotels that offer a healthy lifestyle program focus on aspects of physical, mental, emotional, and spiritual wellness in the pursuit of total well-being (PR Newswire, 2018). Since this is the foundation for these wellness programs, it is paramount that guests are able to have options in activities they partake in that are offered by their hotel of choice. The objective is for guests …

Refilling The Oilpots: Developing A Program To Reverse Stagnancy In African-American Churches, Mancil Carroll
Refilling The Oilpots: Developing A Program To Reverse Stagnancy In African-American Churches, Mancil Carroll
Doctoral Dissertations and Projects
Many African American churches in America are experiencing a decline in attendance and participation. The typical church goes through a life-cycle that includes the church's birth, infancy, maturity, stagnation, and death. However, it is possible to create a rebirth process that will restart the life-cycle from the beginning. This thesis develops a strategic plan to initiate church rebirth and build momentum for the congregation. This project's research approach will include interviews with the leaders of a medium-size African American church in Dallas's suburbs. The project will also include survey questionnaires to congregants, former church members, and random subjects selected through …

A Study On The Healthy Church Growth Through The Revitalization Of Small Group In Traditional Church, Min Yong Park
Doctoral Dissertations and Projects
The church is the body of Jesus Christ, which Christ has built and became the head of it. Therefore, the church is not a building or a social organization, but a family community of the laity who saved through Christ and united under him. Recently, however, the Korean church has lost its original nature planned by God. They achieved significant external growth that made churches around the world focus. But lost the true nature and obsessed with the outward buildings and numbers. As a result, the holy influence of the church on the world diminished.

A Strategy For Building Healthy Local Churches In Jordan, Kwang Hu Hwang
Doctoral Dissertations and Projects
Evangelical churches in Jordan have faced many challenges in maintaining healthy churches under the Islamic government. The churches in Jordan are not only important for local people, but also for people in the Middle East in fulfilling the Great Commission. This is because many Jordanians visit various Arab countries to have a job and a numerous number of Gulf countries’ people travel to Jordan. The purpose of this thesis is to create a strategy with this context to build healthy local churches in Jordan that can then be involved in fulfilling the Great Commission actively for the local and Arab …

A major goal of this study was to determine whether serum protein fractions of healthy Florida manatees differ with age, sex, or living environments (wild versus housed). A second goal was to determine which serum protein fractions vary in diseased versus healthy manatees. Serum protein fractions were determined using agarose gel electrophoresis. Healthy adults had slightly higher total serum protein and total globulin concentrations than younger animals. This largely resulted from an increase in gamma globulins with age. Total serum protein, albumin, alpha-1 globulin, beta globulin, and total globulin concentrations were slightly higher in housed manatees compared to wild manatees, …

Ministry Partners: Ten Key Characteristics Of A Healthy Marriage In Ministry, Arlen Pfenninger
Doctoral Dissertations and Projects
In the beginning, God created a partner for man to have as they live their lives together. This partnership was created so they could work together for the kingdom God created. There has been literature written about the unhealthiness of some marriages in ministry because the pastor has neglected his or her family for the cause of Christ. There are others who have advocated a partnership in marriage ministry where the husband and wife work together as a ministry team. This thesis project presents an understanding of the healthy characteristics couples portray as they partner together in the ministry in …
