Food insecurity is a known health equity threat for formerly chronically homeless populations even after they transition into permanent housing. This project utilized a human-centered design methodology to plan and implement a nutrition-focused community-health-worker (CHW) intervention in permanent supportive housing (PSH). The project aimed to increase access to healthy foods, improve nutritional literacy, healthy cooking/eating practices, and build community/social connectedness among 140 PSH residents. Validated food-security screening conducted by CHWs identified low or very low food security among 64% of 83 residents who completed the baseline survey, which is similar to rates found in a previous study among formerly homeless …

INTRODUCTION: We studied the replication and generalization of previously identified metabolites potentially associated with global cognitive function in multiple race/ethnicities and assessed the contribution of diet to these associations.

METHODS: We tested metabolite-cognitive function associations in U.S.A. Hispanic/Latino adults (n = 2222) from the Community Health Study/ Study of Latinos (HCHS/SOL) and in European (n = 1365) and African (n = 478) Americans from the Atherosclerosis Risk In Communities (ARIC) Study. We applied Mendelian Randomization (MR) analyses to assess causal associations between the metabolites and cognitive function and between Mediterranean diet and cognitive function.

RESULTS: Six metabolites were consistently associated …

Strategies For Christian Educators And Administrators To Move From Pre-Pandemic Vuca Reaction To Post-Pandemic Vuca 2.0 Response., Doug Atha

International Christian Community of Teacher Educators Journal

Abstract

Pre-pandemic Volatile, Uncertain, Complex and Ambiguous (VUCA) realities added specific complexity to education and administrative practice at Christian schools, influencing Christian school educators and administrator reactions to the challenges experienced in their social and professional contexts (Ungerer, Ungerer and Herholdt, 2016). Post-pandemic realities however, will require greater diligence for Christian educators and administrators. The transition from pre-pandemic reactive responses to VUCA influence on Christian school environments to applying visionary, understandable, courageous and adaptive (VUCA 2.0) strategic principles for those same environments, is a necessary strategic challenge to accept. Christian school educators and administrators wanting to support a healthy and …

Blue Zones: Unlocking Key Themes In The Centenarian's Life, Grace Beer, Grace O. Beer

Honors College Theses

Longevity has been sought after in certain areas of the world, and there are specific regions where this has been achieved. There is an American average life expectancy of 72 years old, but individuals in “Blue Zones” here in America and other areas of the world are expected to and have proven to live well beyond 100. The areas of Okinawa, Sardinia, Nicoya, Ikaria, and Loma Linda are classified as Blue Zones, and there could be more of an understanding of how these people live the way they do to have such healthy physical outcomes. To deeply understand the strategy …

The Alterations Of Fecal Microbiota In Dogs With Acute Diarrhea, Thailand, Jeerawat Soonthornsit, Natharin Ngamwongsatit, Panpanga Sangsuriya, Nlin Arya

The Thai Journal of Veterinary Medicine

Acute diarrhea is a common clinical sign in dogs which the pathogenesis has associated with altered gut microbiome compositions and influenced by diet, environment, and medication. However, the impact of gut microbiome on dog health has still not been well elucidated in Thailand. This study aims to investigate the alterations of the fecal microbiome in dogs with diarrhea (<3 days) compared to healthy dogs. Fresh feces were collected once from each dog, and DNA extraction was performed following the QIAamp DNA stool mini kit protocol. The 16s rRNA gene, then, amplified and analyzed by the next-generation DNA sequencing technology. The results showed a significant reduction of the evenness and Shannon index in dogs with the diarrhea group. The most dominant phylum in healthy dogs, Firmicutes, was markedly declined. Additionally, significant decreases in bacterial abundances were observed in twelve genera. To the best of our knowledge, seven of them were first described in their alterations including Clostridium sensu stricto 1, Lachnospiraceae NKA4136 group, Erysipelatoclostridium, Tyzzerella 3, Alloprevotella and Slackia. Therefore, these findings disclose the new possible biomarkers for intestinal diseases and the effect of ordinary diets on the fecal microbiome in dog health, Thailand.

Impaired mobility is the most common form of functional disability in the US, affecting one out of every sixteen working-age adults. Little is known about the barriers to and facilitators of healthy eating among people with impaired mobility (PWIM), who are at increased risk for diet-related chronic disease. The pathways by which impaired mobility influence dietary intake are unclear, yet likely involve a complex interplay between structural determinants of health and individual factors. To help advance nutrition equity initiatives for PWIM, this systematic review aimed to qualitatively synthesize factors associated with dietary intake across four levels of ecologic influence. An …

Capstone Projects and Master's Theses

Nutrition should be considered an important factor in one’s life, and be discussed into further context at school as well as at home. Having healthy nutrition can help with physical growth and development of an individual, allowing children the development of mindset, capacity building, capabilities, cognitive development, gross and motor skills within an individual's effective consumption of healthy and nutritious meals. In order to support the nutrition skill regulations, I have developed a two-day curriculum for Kindergarten children at Alisal Community Elementary in Salinas, California. In this curriculum, I would explain to the participants how to differentiate a healthy meal …

Increasing Nutrition Education In Elementary Schools, Guadalupe Zamora Madrigal May 2021

Increasing Nutrition Education In Elementary Schools, Guadalupe Zamora Madrigal

Capstone Projects and Master's Theses

There is a lack of nutrition education in most elementary school curriculums. The importance of healthy nutrition is essential because most parents supply food for their children. Children don’t often get to control the foods they intake because parents choose their food choices for them. Most of the time parents don’t make the healthiest food choices and it affects a child’s well being. Therefore, teaching children about a healthy nutrition can encourage them to make healthier food choices for themselves and benefit their wellbeing.

Hotel wellness programs have been recognized by businesses and societies fostering wellness among individuals. Sometimes, responding to higher costs and enhancing corporate social responsibility for these programs have grown well in popularity (Torres & Zhang, 2021). Most hotels that offer a healthy lifestyle program focus on aspects of physical, mental, emotional, and spiritual wellness in the pursuit of total well-being (PR Newswire, 2018). Since this is the foundation for these wellness programs, it is paramount that guests are able to have options in activities they partake in that are offered by their hotel of choice. The objective is for guests …

The Correlation Between Ankle Proprioception And Lower Extremity Muscle Reactions In Response To Simulated Lateral Ankle Sprains, Erin M. Carroll Apr 2021

The Correlation Between Ankle Proprioception And Lower Extremity Muscle Reactions In Response To Simulated Lateral Ankle Sprains, Erin M. Carroll

Theses and Dissertations

Context: Lateral ankle sprains are one of the most commonly occurring sport-related injuries. The somatosensory system is primarily responsible for monitoring the position of the joints in space during movement. This system functions by way of neurological structures that provide proprioceptive and neuromuscular input to the brain. Motor control of the lower extremity relies on proprioceptive input to the central nervous system (CNS) and local neuromuscular control of each joint to produce coordinated, global muscular responses to external events. Previous research has investigated links between proprioception and neuromuscular control in relationship to ankle inversion separately, but none have searched for …

Electronic Theses and Dissertations

The description of human motion has a primary importance in different scientific areas such as medicine, sports, physical therapy. Kinematics specifically studies pure motion without reference to the causes of motion such as forces. Understanding the kinematics of human movement is of critical importance in medicine and biology. Motion measurement can be used in order to to evaluate functional performance of limbs under normal and abnormal conditions. Kinematic knowledge is also important for diagnosis and surgical treatment of joint disease and the design of implants to rehabilitate function. Accurate joint kinematics is essential to protect articular functionality. An alteration may …

Refilling The Oilpots: Developing A Program To Reverse Stagnancy In African-American Churches, Mancil Carroll Dec 2020

Refilling The Oilpots: Developing A Program To Reverse Stagnancy In African-American Churches, Mancil Carroll

Doctoral Dissertations and Projects

Many African American churches in America are experiencing a decline in attendance and participation. The typical church goes through a life-cycle that includes the church's birth, infancy, maturity, stagnation, and death. However, it is possible to create a rebirth process that will restart the life-cycle from the beginning. This thesis develops a strategic plan to initiate church rebirth and build momentum for the congregation. This project's research approach will include interviews with the leaders of a medium-size African American church in Dallas's suburbs. The project will also include survey questionnaires to congregants, former church members, and random subjects selected through …

A Study On The Healthy Church Growth Through The Revitalization Of Small Group In Traditional Church, Min Yong Park May 2020

A Study On The Healthy Church Growth Through The Revitalization Of Small Group In Traditional Church, Min Yong Park

Doctoral Dissertations and Projects

The church is the body of Jesus Christ, which Christ has built and became the head of it. Therefore, the church is not a building or a social organization, but a family community of the laity who saved through Christ and united under him. Recently, however, the Korean church has lost its original nature planned by God. They achieved significant external growth that made churches around the world focus. But lost the true nature and obsessed with the outward buildings and numbers. As a result, the holy influence of the church on the world diminished.

This paper defines the term …

Increasing Healthy Eating Habits In Preschoolers, Lizbeth Angeles May 2020

Increasing Healthy Eating Habits In Preschoolers, Lizbeth Angeles

Capstone Projects and Master's Theses

During ages 3 to 5, children start to develop their own food choices. Because of this ability, children benefit from education on nutrition and learning how to differentiate healthy foods from unhealthy foods. If children do not have adequate nutrition education, they are at risk of developing unhealthy eating habits, which later on could have negative effects on children’s health. To address the lack of nutrition education in preschoolers, I created a three-day lesson plan about healthy eating choices for preschoolers at the Valle Verde Migrant and Seasonal Head Start in Greenfield, California.

Is Age An Independent Factor In Assessing Renal Health And Function In Healthy Individuals? A Pilot Study, Eleasar Valadez, David J. Buckley, Ahmed Ismaeel, Autumn Oliver, Kathleen Adair, Evlampia Papoutsi, Kaitlyn Prezioso, Andreas Stamatis, Panagiotis Koutakis, Jeffrey S. Forsse

International Journal of Exercise Science: Conference Proceedings

Estimated glomerular filtration rate (eGFR) is a measure of renal filtration and clearance of serum creatinine and is conventionally used to characterize the progressive decline in renal function. Assessment of renal function and health is traditionally believed to be age-dependent. However, in the absence of cardiometabolic diseases (hypertension, diabetes, hyperlipemia, etc.), this may not be the case. Recently, novel markers of renal health and function support the notion that age is a secondary factor influencing renal decline. PURPOSE: To determine the magnitude of age as an influencing factor involved in the decline of renal function with novel markers of renal …

Dairy-Free Mac & Cheese: An Effective Intervention For Lactose Intolerants And Vegans, Hamza Alvi, Max Stapleton Jan 2020

Dairy-Free Mac & Cheese: An Effective Intervention For Lactose Intolerants And Vegans, Hamza Alvi, Max Stapleton

2020 Research Posters

42% of the children and adults in the US (aged 13-71) have lactose intolerance (Storhaugh, 2017).

Lactose intolerance is due to the deficiency of an enzyme (i.e. lactase) that breaks down the milk sugar called lactose. Lactose is commonly found in milk, cheese, yogurt, etc.

The plant-based diet is becoming increasingly popular among Americans and rest of the world. The vegan diet excludes foods like meat, eggs, dairy, and any other product that comes from animals.

The researchers’ dairy-free mac & cheese is intended to be a replacement for a traditional mac & cheese that contains milk and cheese. This …
