Introduction: Fish is an affordable animal source food that provides nutrition and serves as a source of income for many people especially women in Nigeria. Smoking and sun drying are the processing methods in practice that expose the fish products to possible contaminants which may consequentially negate their nutritive value.

Aim: To improve the knowledge of fish processors on nutrition and safe fish handling.

Knowledge and application gaps exist for women farmers in Sub-Saharan Africa who are key agricultural players for economic growth and food security. This study examined capacity development for Sanitary and Phytosanitary (SPS) measures and empowerment of women farmers considering Rappaport (1984) and Zimmerman’s (1995, 2000) lenses of empowerment theory. This study aimed to evaluate the fate and dissemination of Salmonella Reading (SR) in market-age turkeys using an oral gavage challenge model. One hundred twenty-eight-week-old commercial turkey hens were moved from commercial production to research facilities. Upon arrival, a combination of enrofloxacin, 10 mg/kg, and florfenicol, 20 mg/kg, were orally administered sequentially before comingled placement on fresh pine shavings. Turkeys were challenged with 108 cfu SR by oral gavage on days 4 and 7 post-placement. This dissertation investigates food safety regulations and international trade of agricultural products dividing into three aspects: the signalling effect from U.S. strict food safety regulations on U.S. vegetable exports, political determinants of sanitary and photosanitary non-tariff barriers, and the impact of trade barriers on employment in developing countries. In chapter 2, we investigate the impact of high U.S. maximum residue limit (MRL) standards on U.S vegetable exports to 102 countries utilizing the hierarchical model. Because several FSMA rules require that covered businesses comply with standards by 2019 at the latest, the legislation is expected to have considerable effects on the U.S. food system in the near future. Foodborne illness outbreaks linked to the consumption of fresh produce expose fruit and vegetable growers to uncertain legal and compensatory costs associated with product liability actions. Product liability insurance protects farmers against the risk of financial loss from product liability actions and may create opportunities for market expansion, but insights from recent focus groups suggest that Tennessee farmers may perceive this insurance coverage as cost prohibitive. This thesis explores the four main reasons that China has many food safety regulatory issues: the wide dispersion of farms in China, the fragmentation of the food safety regulatory system, weakness of local implementation, and the poor structure of commerce. Many food recovery agencies depend on donated food, and its safety is critical for the health of vulnerable populations. A food safety curriculum was developed for agency volunteers and paid staff of the Lower Mississippi Delta region. Examples of topics in the curriculum included: personal hygiene, food storage, transporting food safely, and HACCP. Food Safety Knowledge Pre- and Posttests (20 questions) were identical, and validity and reliability were established prior to use. Paired t-tests were performed to determine the effectiveness of the curriculum (n=190).
