One of the most important purposes of communication is to warn people of environmental dangers. More specifically, communication can identify risks associated with food safety. The government and food safety experts are to provide information on these dangers. This study aims to determine whether these entities use consistent language to communicate these dangers. The reader will first take a journey through relevant communication concepts and an introduction to food safety. Interest in home food preservation has continued through the COVID-19 pandemic. This study assessed home food preservation practices among individuals attending workshops delivered primarily through distance technology. Two hundred eighty (280) participants completed a survey that assessed methods of food preservation and sources of information and recipes that had been utilized within the previous 12 months. Of those participating, 148 had recently canned food, and 90 of those individuals reported using one or more unsafe methods of food preservation, such as processing vegetables with a boiling water bath canner, open kettle, or oven canning. The study evaluated the perceptions and readiness of food business operators about COVID-19 through an online survey with respondents from Metro Manila and Region IV-A. Generally, they are knowledgeable about COVID-19 and its transmission, as reflected in their scores. The same is true about their attitude towards “new normal” practices. Years of operation, asset size, and continued operations and delivery services showed significant positive correlation with attitude scores. The resilience of some food business operators may be attributed to having more resources that enabled them to carry the added costs of what the new normal foodservice practices entailed. Introduction: Fish is an affordable animal source food that provides nutrition and serves as a source of income for many people especially women in Nigeria. Smoking and sun drying are the processing methods in practice that expose the fish products to possible contaminants which may consequentially negate their nutritive value.
Aim: To improve the knowledge of fish processors on nutrition and safe fish handling.

Knowledge and application gaps exist for women farmers in Sub-Saharan Africa who are key agricultural players for economic growth and food security. This study examined capacity development for Sanitary and Phytosanitary (SPS) measures and empowerment of women farmers considering Rappaport (1984) and Zimmerman’s (1995, 2000) lenses of empowerment theory. Food has been the driving preoccupation of humans since the dawn of evolution. Exactly when food processing began and when the original hunter-gatherers settled down to develop agriculture-or even the question of which of these occurred first-remain issues of scholarly pursuit and debate. It is clear, however, that these events occurred millennia before the advent of recorded history; therefore, we must rely on largely adventitious discoveries of archeological artifacts to advance our developing knowledge of these events.

In the United States, the legal framework for product date labeling is minimal and varies across states. Manufacturers have the discretion to use any date label that they deem appropriate, and this lack of uniformity leaves room for misinterpretation by both retailers and consumers. This study aimed to evaluate the fate and dissemination of Salmonella Reading (SR) in market-age turkeys using an oral gavage challenge model. One hundred twenty-eight-week-old commercial turkey hens were moved from commercial production to research facilities. Upon arrival, a combination of enrofloxacin, 10 mg/kg, and florfenicol, 20 mg/kg, were orally administered sequentially before comingled placement on fresh pine shavings. Turkeys were challenged with 108 cfu SR by oral gavage on days 4 and 7 post-placement. Subsets were subjected to simulated commercial processing on days 14 (n=40), 21 (n=40) and 28 (n=32) post-placement (corresponding to 10, 11, and 12 weeks of …

Consumers are concerned about the quality and safety of their food at all times during the food supply chain, but sensationalized media coverage, lack of knowledge, and recent recalls have made it difficult for consumers to trust the agricultural industry. Because trust drives risk perceptions and acceptance, it is important for agricultural communicators to understand how personal characteristics influence trust in the food supply chain. Americans dispose of millions of pounds of tons of food, and the U.S. Department of Agriculture estimates that 11.8 percent of American households, or about 15 million, had difficulty providing enough food for all their family members (Coleman-Jensen et al., 2018). Background: Foodborne illness is a serious public health issue. One in six Americans has an episode of foodborne illness each year and over 50,000 are hospitalized. Food distribution centers are instrumental in decreasing food insecurity, however, some of the food donated is expired or may be damaged leading to increased risk of foodborne illness.

Purpose/Objectives: This study explored food traceability systems in school foodservice in the United States and the potential benefits and challenges to their implementation.
Methods: An online questionnaire was developed and used to collect data. A mixed-mode approach was followed to recruit the participants. A convenience sample of 500 school nutrition professionals from Qualtrics panel was targeted for data collection with the goal of having responses from 300 participants. We use data from a national survey of fruit and vegetable growers to examine the current prevalence and cost burden of food safety practices required in the proposed Produce Rule implementing the Food Safety Modernization Act. In particular, we analyze the influence of farm size and farming practices on the probability of adopting food safety measures that would be required by the Produce Rule; and we analyze how the costs of using those food safety practices vary by farm size and farm practices. The adoption of genetically engineered (GE) crop varieties by U.S. farmers is widespread for major crops—94 percent of planted acres for soybeans, and 88 percent for corn in 2012 (USDA-NASS 2012). This dissertation investigates food safety regulations and international trade of agricultural products dividing into three aspects: the signalling effect from U.S. strict food safety regulations on U.S. vegetable exports, political determinants of sanitary and photosanitary non-tariff barriers, and the impact of trade barriers on employment in developing countries. In chapter 2, we investigate the impact of high U.S. maximum residue limit (MRL) standards on U.S vegetable exports to 102 countries utilizing the hierarchical model. Foodborne illness outbreaks linked to the consumption of fresh produce expose fruit and vegetable growers to uncertain legal and compensatory costs associated with product liability actions. Product liability insurance protects farmers against the risk of financial loss from product liability actions and may create opportunities for market expansion, but insights from recent focus groups suggest that Tennessee farmers may perceive this insurance coverage as cost prohibitive.
