Everyday millions of Americans face barriers to accessing food, housing, and other supports–––making the impossible decision of whether to put food on the table or cover other essential needs. Food insecurity and diet-related diseases, such as heart disease and diabetes, affect people of all ages and in all communities. It was for this reason that the Biden-Harris Administration hosted the White House Conference on Hunger, Nutrition, and Health in September 2022. As the President said at the Conference, “No child should go to bed hungry. No parent should die of a disease that can be prevented.” It will require all …

Food insecurity is a prevalent issue throughout the United States, the state of Oklahoma, and on Oklahoma State University’s (OSU) Stillwater campus. Research has shown that college and university students tend to be more food insecure than national population averages and Stillwater’s food insecurity rates have been even higher. Mobile food pantries (MFP) generally have been effective in addressing food insecurity, but few studies have investigated their use to alleviate food insecurity among college students. For more than forty years, the United States Department of Agriculture Supplemental Nutrition Assistance Program (SNAP; formerly Food Stamps) has offered nutrition assistance to nearly forty million eligible individuals and families each month. This article first provides a brief overview of the evolution of the United States’ largest domestic food security and nutrition safety net program. Then, the article reviews Congressional actions taken regarding SNAP during the 2018 Farm Bill deliberations, appropriations for fiscal years 2017 through 2020, and oversight (in)activities. According to recent studies, food insecurity affects from 34%-59% of college students. This will continue to be an issue as tuition increases and more low-income and first-generation students enter universities and colleges. Nearly 52% of college students live at, or near, the poverty level, compared to a national poverty rate of 14.5%. This leaves many undergraduate and graduate students with challenging decisions around meeting their basic housing, nutritional, and educational expenses. Development issues in growing nations can be seen and discussed in service-learning programs on Purdue’s campus. Two international experiences in Haiti and Peru reveal a need for development strategies that can be universally applied in service-learning settings. Traveling with graduate students from Lima, Peru, to study animal connection in Peruvian society and teaching Haitian university students the basics of water quality and testing allow the exchange of ideas between cultures and profound learning for both parties. Families who are food insecure do not have regular access to food, access to enough food to satisfy their hunger, or have to resort to extraordinary measures to access food such as traveling to food pantries and other emergency food sources. This article focuses on low-income families with children who live in extended stay motels and experienced food insecurity. Families reported several indicators of food insecurity and discussed the barriers to food security they experienced as a result of living in a motel. In 1996, The World Food Summit (WFS) set a target to eradicate hunger in all countries and an immediate goal to half the number of undernourished people by 2015. Backed by the United Nations (UN), international organizations launched a global effort with the intent of achieving food security for all people. A variety of approaches were employed, including the distribution of food aid and farming supplies, skills training in agricultural development, funding for country-specific research, and legal counsel for states. Hungry For Respect: Discrimination Among Adults Using Emergency Food Services, Gilbert C. Gee, Kathryn J. Lively, Larissa Larsen, Jennifer Keith, Jana Stone, Kara Macleod

Journal of Health Disparities Research and Practice

Objectives: We examined how adults using emergency food services report discrimination and how these reports may be associated with well-being.

Methods: Data come from a survey (n=318) and from five focus groups of adults using emergency food services, conducted between 2003-2004. The survey included measures derived from the Everyday Discrimination Scale and the Centers for Epidemiologic Studies Depression Scale (CES-D). Focus groups were analyzed with content analysis.

Results: The survey data suggest that everyday discrimination was associated with the CES-D, conditional on covariates. Focus group data are consistent with the survey results and suggest several avenues for future research, including …

Tents Along The Merrimack: Homelessness And University-Community Cooperation, Mark D. Levine

New England Journal of Public Policy

This article presents historical, institutional, and ethical contexts for a university and an industrial, ethnic community's cooperative effort to address local hunger and homelessness. A large portion of the University of Massachusetts at Lowell's students are of working-class and local origin. Neighborhood social problems are in effect their own, and community service may be considered a variant of self-help. Attention is paid the special importance of developing a sense of community across traditional boundaries on and off campus and to the establishment of permanent mutually beneficial structures.
