3rd Place Research Paper: Cultural Attitudes Towards Ethnic Cuisine In Italy, Rachel Berns
3rd Place Research Paper: Cultural Attitudes Towards Ethnic Cuisine In Italy, Rachel Berns
Kevin and Tam Ross Undergraduate Research Prize
Italy has become a common “landing country” for many European and Asian immigrants, creating a perception of invasion that has led to cultural reactionism masked in the reinforcement of “traditional cuisine.” For so-called traditional foods to endure, they must continually be reinvented, bearing different meanings and social values throughout time and space while accumulating rich, cultural baggage that serves as a powerful marker of identity in a given society. This paper explores the role of traditional cuisine in Italian national identity and pride, and the subsequent historical culinary antagonism maintained in widespread attitudes toward ethnic cuisine in Italy. Through an …

Isolation And Characterisation Of Soil-Derived Bacteria With Antimicrobial Activity Against Antibiotic Resistant Pathogens, Ellen Twomey
Isolation And Characterisation Of Soil-Derived Bacteria With Antimicrobial Activity Against Antibiotic Resistant Pathogens, Ellen Twomey
Theses
Bacteriocins are a diverse range of ribosomally synthesized bioactive peptides, recognised predominantly for their potent antimicrobial activity against other strains closely related to the producer. The focus of this thesis was to explore this activity and examine the potential of bacteriocins to inhibit the growth of clinically relevant pathogens. Although evidence exists in the literature to suggest that bacteriocins could be applied in a similar fashion to conventional antibiotics, to date they are only utilised as preservative in food to prevent the growth of foodborne illness causing organisms. Isolating and screening bacterial strains in order to identify bacteriocin producers has …

The Inhibition Of Valproic Acid-Induced Negative Neurodevelopmental Outcomes Through Nrf2-Mediated Redox Regulation, Ted Brenton Piorczynski
The Inhibition Of Valproic Acid-Induced Negative Neurodevelopmental Outcomes Through Nrf2-Mediated Redox Regulation, Ted Brenton Piorczynski
Theses and Dissertations
Valproic acid (VPA) is a commonly prescribed antiepileptic drug that causes negative neurodevelopmental outcomes, including neural tube defects (NTDs) and neurodevelopmental disorders, in fetuses exposed to it. While the exact mechanism by which VPA causes defects is unknown, research has shown that VPA increases the production of reactive oxygen species (ROS) that lead to redox dysregulation. We hypothesize that VPA causes negative neurodevelopmental outcomes through the disruption of redox-sensitive signaling pathways that are critical for proper embryonic development, and that protection from the VPA-induced redox disruption may decrease the prevalence of the observed defects. Time-bred mice were treated with 3H-1,2-dithiole-3-thione …

Population Genetic Structure In Channeled Whelk Busycotypus Canaliculatus Along The U.S. Atlantic Coast, Samantha E. Askin, Robert A. Fisher, Ellen E. Biesack, Rick Robins, Jan Mcdowell
VIMS Articles
Globally, commercial fisheries for whelk (family Buccinidae) generally exhibit a boom-and-bust cycle that fuels overexploitation of resources. Channeled whelk Busycotypus canaliculatus is a commercially important species that supports a valuable fishery along the Atlantic coast of the United States. The fishery is managed at the state level, with minimum landing size varying by state. Biological studies of channeled whelk in New England and the mid-Atlantic region have indicated that females have a low probability of maturity upon entering their respective fisheries. The life history characteristics of channeled whelk, including slow growth, late maturation, and direct development paired with unsuitable minimum …

Novel Molecular Approaches To Diagnostic And Epidemiological Analyses Of Cryptosporidiumspp.Implicated In Clinical Infection, Jennifer K. O'Leary
Theses
Cryptosporidium remains an underestimated, yet highly prevalent, parasitic agent of gastrointestinal illness worldwide. In clinical settings, diagnosis has previously relied on microscopic techniques. However, enteric parasite targeting molecular tools, such as real-time PCR panels, have superseded microscopy in recent years. This body of work examines the nature, implications and opportunities of this paradigm shift. This thesis is divided into seven chapters that consist of a literature review chapter, five experimental chapters focusing on the molecular diagnosis and epidemiological analysis of Cryptosporidium spp., and a final summary chapter. Chapter I provides the contextual narrative and supportive reasoning behind the research undertaken …

Investigating The Antioxidant, Immunomodulatory And Anti-Obesogenic Propertiesof Novel Bsg-Derived Extracts And Their Potential As Ingredients In Functional Foods For Older Adults, Suzanne O Brien
Theses
Brewer’s Spent Grain (BSG) represents a substantial waste product of the brewing industry, with 39 million tonnes generated globally every year. To date the primary use of BSG is as animal feed but there is significant interest in identifying alternative uses for this agro-industry by-product. BSG is rich in protein and fibre and is known to contain health-promoting bioactive compounds, thus one application would be in the area of functional foods. People are living longer and as the older adult population continues to increase globally so too is the prevalence of age-related chronic conditions. Diet plays an essential role in …

Children’S Ethno-National Flag Categories In Three Divided Societies, Edona Maloku, Jocelyn B. Dautel, Ana Tomovska Misoska, Laura K. Taylor
Articles
Flags are conceptual representations that can prime nationalism and allegiance to one’s group. Investigating children’s understanding of conflict-related ethno-national flags in divided societies sheds light on the development of national categories. We explored the development of children’s awareness of, and preferences for, ethno-national flags in Northern Ireland, Kosovo, and the Republic of North Macedonia. Children displayed early categorization of, and ingroup preferences for, ethno-national flags. By middle-childhood, children’s conflict-related social categories shaped systematic predictions about other’s group-based preferences for flags. Children of minority-status groups demonstrated more accurate flag categorization and were more likely to accurately infer others’ flag preferences. While …

The Land Of Meat And Potatoes? Exploring Ireland’S Vegan And Vegetarian Foodscape, Corey Lee Wrenn
The Land Of Meat And Potatoes? Exploring Ireland’S Vegan And Vegetarian Foodscape, Corey Lee Wrenn
Corey Lee Wrenn, PhD
While it would not be accurate to suggest that Ireland is a hub of veganism or vegetarianism, too often it is written off as inherently unsympathetic to the ethics of plant-based eating and anti-speciesist politics. While it is true that Irish culture is historically tied to speciesism and its economy is especially dependent upon “meat” and dairy production, Ireland’s relationship with other animals is complex and sometimes forgiving. This essay seeks to bring shape to the Irish vegan ethic, one that can be traced along its history of animism, agrarianism, ascendency, adaptation, and activism. From its pagan roots to its …
