The purpose of this study was to assess long chain polyunsaturated fatty acid (LCPUFA) status in relation to socio-behavioral outcomes in children with Attention Deficit/Hyperactivity Disorder (AD/HD). In a case-control design, plasma phospholipid fatty acid content was assessed in children aged 5–12 years with AD/HD and in typically functioning children. Dietary intakes of LCPUFAs arachidonic acid (AA; 20:4n6) and docosahexaenoic acid (DHA; 22:6n3) were quantified using a four-day food record, polymorphisms were determined in FADS1 and FADS2, and socio-behavioral outcomes were assessed using the Conners 3 Parent Rating Scales in a cross section of children with AD/HD. Prolific use of supplementation strategies, including the utilization of urea, are practiced in beef cattle production systems. Unfortunately, the influence of urea supplementation on metabolics, adipose tissue mobilization, and mammary secretions is limited in beef cows. Therefore, the objectives of this experiment were to assess the influence of urea supplementation on metabolic profiles, morphometrics, and mammary secretions. Our program aimed to increase knowledge related to fermented foods. Over 400 stakeholders registered for a webinar series that focused on defining fermented foods, health benefits of fermenting foods, and the safety of fermented foods. Participants indicated increases in knowledge and overall satisfaction with the content of the fermentation curriculum. The impact of the COVID-19 pandemic on the program outcomes are discussed.

Breastfeeding rates in America are lower than other high-income countries, with Mississippi having one of the lowest rates. A survey using the Iowa Infant Feeding Attitude Scale (IIFAS) was distributed twice to Mississippi State University students to understand their breastfeeding attitudes. Attitudes were determined by calculating a composite score and conducting statistical tests for significance. Knowledge between health and non-health related majors were explored by using five statements, and attitudes towards the statement “Breastmilk is the ideal food for babies” were compared across demographics. Background: Food is not equitably available. Deficiencies and generalizations limit national datasets, food security assessments, and interventions. Additional neighborhood level studies are needed to develop a scalable and transferable process to complement national and internationally comparative data sets with timely, granular, nuanced data. Participatory geographic information systems (PGIS) offer a means to address these issues by digitizing local knowledge.

In addition to the direct health impacts of COVID-19, government and household mitigation measures have triggered negative indirect economic, educational, and food and health system impacts, hitting low-and middle-income countries the hardest and disproportionately affecting women and girls. We conducted a gender focused analysis on five critical and interwoven crises that have emerged because of the COVID-19 crisis and exacerbated malnutrition and food insecurity. These include restricted mobility and isolation; reduced income; food insecurity; reduced access to essential health and nutrition services; and school closures. Stakeholders sought to reduce the burden of preventable diabetes among adults in Utah via a “Food as Medicine” webinar series. The “Food as Medicine” webinar series sought to increase awareness of and enrollment in public diabetes programs. Evaluation results from the webinar series indicated an increase in awareness of diabetes programs and nutrition information needed to improve personal diabetes management.

During the last six to seven decades, broilers have been successfully selected for maximum growth and feed efficiency (Zuidhof et al., 2014). Modern fast-growing broilers reach a body weight of 2.0 to 2.5 kg in 35 to 45 days with an average daily growth of 55 or more gram a day (Augère-Granier, 2019). In a study with different broiler strains representative of broilers in 1957 or 1978 were compared with a broiler strain from 2005 (Zuidhof et al., 2014). The methods for feeding broiler breeder males have evolved over recent decades, and further revisions will likely be needed as males become more challenging to manage. Since the introduction of separate male feeding systems in the early 1980’s, breeder males’ nutrient needs have been better managed via daily feed restriction. If a breeder operation can effectively produce, haul, and store a separate male diet, then it provides more options to use different nutrient levels or feed additives that are designed to enhance fertility. Sub-therapeutic doses of antibiotics were used in poultry production since the 1950s for improved production, prophylaxis, and animal welfare. Extensive and indiscriminatory use of antibiotics led to the emergence of antibiotic resistance in food-borne pathogens of public health significance (Jones & Ricke, 2003). As per the United States Centre for Disease Control, more than 2.8 million infections in 2019 were caused by multidrug resistant bacteria. Due to public health concerns, the use of antibiotic growth promoters in livestock production was prohibited by Sweden and Denmark in 1986 and 1998 respectively (Hammerum et al., 2007). Create Healthy Futures is a self-paced, web-based intervention on improving healthy eating behaviors among Early Care and Education (ECE) providers. We examined the impact of web-based Create Healthy Futures on diet quality measured by the Alternative Healthy Eating Index (AHEI) 2010, dietary behaviors, and related psychosocial and environmental factors among ECE providers. A cluster randomized controlled trial (CRCT) was implemented with baseline surveys administered from October 2019-January 2020, intervention implementation from April-May 2020, and post-intervention from May 2020-August 2020. This study was conducted to increase our understanding of the influence of adult female pronghorn (Antilocapra americana) physiology on fawn summer survival. Pronghorn are a valued big game animal in Idaho, but are particularly sensitive to capture; therefore, we designed a noninvasive fecal sampling study to measure pregnancy (progesterone and estrogen), diet, nutrition (fecal nitrogen and DAPA), and stress (cortisol), during metabolically-demanding female life history stages (late gestation, early lactation, and breeding season). We also compared survey results between ground and aerial methods within mountain valley landscapes.

College student weight gain has steadily increased throughout the past decades. Issues resulting from overweight and obesity can lead to chronic disease and increased mortality risk. The objective of this study was 1) to evaluate which foods or beverages are significantly associated with an objective marker of hydration status (USG), to examine the association between hydration status or total fluid intake with body fat % and fat-free mass (FFM) (2) and bone mineral density (BMD) and bone mineral content (BMC) (3) in children (10-13y) and adolescents (18-20y). CBH is a comprehensive nutrition curriculum designed to teach adult SNAP-Ed participants how to eat well and be active on a budget. CBH combines nutrition and physical activity recommendations from United States Department of Agriculture (USDA). Each lesson has three components: a nutrition topic based on the current Dietary Guidelines for Americans, a physical activity discussion based on USDA recommendations, and a Create recipe demonstration and sample. The components are woven together in eight lessons that are designed to keep participants engaged, while actively learning the skills needed to create a healthier lifestyle.

Sex differences are an important consideration when researching and establishing policies for nutrition and optimal health. For women's health, there are important physiologic, neurologic, and hormonal distinctions throughout the lifecycle that impact nutritional needs. A collaborative partnership launched the Great Grocer Project (GGP) in March 2021 in Detroit, Michigan where health inequities, including deaths due to COVID-19, have historically been politically determined and informed by socially entrenched norms. Institutional and structural racism has contributed to a lack of diversity in store ownership among Detroit grocers and limited access to high-quality, affordable healthy foods as well as disparate food insecurity among Detroit residents. Food insecurity has long been a global challenge associated with negative health outcomes. The spectrum of food insecurity corresponds to a spectrum of negative health outcomes that range from kwashiorkor and marasmus to obesity and chronic disease. The burden of food insecurity is a stressor that additionally negatively effects mental health. Because FCS agents teach communities about dietary guidelines, it is important that they are aware of the latest nutrition research. This study assessed FCS agents’ knowledge of popular fad diets (low-carbohydrate, intermittent fasting, detoxes and cleanses) and their potential adverse effects, and its relationship among location, certifications, years of experience, professional association memberships, and education. Agents in Louisiana, Texas, Arkansas, and Mississippi were emailed a survey. RDN, DTR, and CHES certifications had significant associations (p = 0.03) with knowledge of adverse effects of fad diets. Agents who hold these credentials may have more knowledge about adverse effects of fad diets.

Quercus palustris and Quercus alba acorns are a primary component in many wild animal diets, particularly during preparation for winter. As such, they provide a natural, easily gathered food staple for wildlife recovering in rehabilitation facilities. We examined whether collection and temperature-controlled storage methods differentially affect the nutritional deterioration of crude fat in acorns to assess both caching by wildlife and to provide recommendations to rehabilitators.
