Mental health is an often-overlooked aspect of overall health and wellness (well-being). Mental illness is increasingly common with 1 in 5 American adults experiencing it annually, and 1 in 20 suffering from a serious mental illness each year [1]. Treatment rates for mental illness are lower in men (37.4%) compared to women (51.2%) [1]. Globally, treatment rates are similar with an estimated cost to the global economy of $1 trillion annually, yet less than 2% of government health expenditure is for mental health worldwide [2]. The purpose of this study was to assess long chain polyunsaturated fatty acid (LCPUFA) status in relation to socio-behavioral outcomes in children with Attention Deficit/Hyperactivity Disorder (AD/HD). In a case-control design, plasma phospholipid fatty acid content was assessed in children aged 5–12 years with AD/HD and in typically functioning children. Dietary intakes of LCPUFAs arachidonic acid (AA; 20:4n6) and docosahexaenoic acid (DHA; 22:6n3) were quantified using a four-day food record, polymorphisms were determined in FADS1 and FADS2, and socio-behavioral outcomes were assessed using the Conners 3 Parent Rating Scales in a cross section of children with AD/HD. The Scleractinian coral Acropora microclados is a commercially important species that functions as both an autotroph and heterotroph. In ex situ coral aquaculture, elucidating an optimal diet to improve growth and resilience is critical in improving the sustainability and success of rearing corals for trade and conservation. Prolific use of supplementation strategies, including the utilization of urea, are practiced in beef cattle production systems. Unfortunately, the influence of urea supplementation on metabolics, adipose tissue mobilization, and mammary secretions is limited in beef cows. Therefore, the objectives of this experiment were to assess the influence of urea supplementation on metabolic profiles, morphometrics, and mammary secretions. Our program aimed to increase knowledge related to fermented foods. Over 400 stakeholders registered for a webinar series that focused on defining fermented foods, health benefits of fermenting foods, and the safety of fermented foods. Participants indicated increases in knowledge and overall satisfaction with the content of the fermentation curriculum. The impact of the COVID-19 pandemic on the program outcomes are discussed.

Fitness and dieting are nothing new, but what makes the latest generation of dieting apps that pair with smart watch devices which track your nutrition and biometric data so different is how much easier they can lead you towards disordered eating. This capstone explores how corporate incentives drive diet apps to co-opt the language of wellness discourse in order to attract the Gen Z market, while selling a product that equates healthiness to a number on a scale.

The purpose of this project is to create a module using the Health Meets Food platform that will teach students how to offer appropriate diet and nutrition counseling to patients identifying as African American, African immigrant, Asian, or Hispanic. The module will include a lesson about the common foods, cultural aspects of food, and attitudes and behaviors associated with food in prominent African American, African immigrant, Asian, and Hispanic cultures present in the United States. The current study aimed to profile styles of eating among dieting and non-dieting college-aged women, and to explore the extent to which dieting attitudes were associated with both nutritionally healthy eating and psychological well-being. A latent profile analysis was conducted using indicators of self-reported intuitive eating, binge eating, and two psychometric measures of dietary restraint; various measures of eating restraint were utilized to potentially capture distinct characteristics of dieting, such as self-discipline and disinhibition (Polivy et al., 2020; Stice et al., 2010). Breastfeeding rates in America are lower than other high-income countries, with Mississippi having one of the lowest rates. A survey using the Iowa Infant Feeding Attitude Scale (IIFAS) was distributed twice to Mississippi State University students to understand their breastfeeding attitudes. Attitudes were determined by calculating a composite score and conducting statistical tests for significance. Knowledge between health and non-health related majors were explored by using five statements, and attitudes towards the statement “Breastmilk is the ideal food for babies” were compared across demographics. Physical activity (PA), diet, and health-related quality of life (HRQOL) are related to maternal and infant health, but interventions to improve these outcomes are needed in diverse pregnant women with elevated weight.
Methods
Health In Pregnancy and Postpartum (HIPP) was a randomized controlled trial. Women who were pregnant (N=219, 44% African American, 56% white) with overweight or obesity but otherwise healthy were randomized to a behavioral intervention grounded in Social Cognitive Theory (n=112) or to standard care (n=107). Lactation is an important life stage that requires a unique emphasis on nutritional intake; existing educational materials on this topic do a poor job of meeting the needs of lactating parents. The purpose of this project was to work with a community partner, the DeKalb County WIC, to create educational materials that will address this issue. The creation of the educational materials was a multi-step process, involving exploration of the relationship between nutrition and lactation and collaboration with the established community partner. Background: Food insecurity during pregnancy has important implications for maternal and newborn health. There is increasing commitment to screening for social needs within health care settings. However, little is known about current screening processes or the capacity for prenatal care clinics to address food insecurity among their patients. We aimed to assess barriers and facilitators prenatal care clinics face in addressing food insecurity among pregnant people and to identify opportunities to improve food security among this population. Berberine (BBR) is a plant-derived alkaloid popularly used in a complementary context to treat splenomegaly and chronic disease states such as rheumatoid arthritis, diabetes, and cancer. Objective: To estimate the effect of reducing dietary protein levels in Nile tilapia (Oreochromis niloticus) with dietary supplementation of commercially-available synthetic amino acids at different levels on growth performance, whole-body composition, morphometric indices, and serum metabolites.Design: Randomized controlled experimental study.Animals: One hundred eighty male Nile tilapia fingerlings.Procedures: One hundred eighty male Nile tilapia fingerlings were equally distributed in twelve glass aquaria (15 fish per aquarium) and fed the formulated diets at 4-5% of the body weight. Moderate-to-vigorous physical activity (MVPA) for prolonged periods of time is related to cardiorespiratory fitness (CRF). Sleep quality (SQ) can be operationally defined from components, such as sleep efficiency and sleep-onset latency. Diet is operationally defined as the quantity and quality of nutrient intake. CRF, SQ, and diet are related to all-cause mortality. The Army Combat Fitness Test (ACFT) is a newly developed test assessing U.S. Army soldiers' combat readiness. The Healthy Eating Index 2015 (HEI-2015) is a questionnaire established by the USDA that quantifies overall diet quality. The HEI-2015 uses a scale of 0 to 100 with higher scores aligning more with the recommendations from the Dietary Guidelines for Americans. The purpose of this project is to create a children’s book titled, Our Food is Healthy Too!, about healthy eating that includes cultural foods, specifically the southern African American and Mexican American cultures. I will use illustrations and characters that will appeal to the targeted audience. My targeted audience are elementary school-age children, particularly second and third-graders. The book will address the main food groups and the different cultural foods or meals that consist of those food groups. The book will educate children on having a healthy, balanced diet with the foods they typically eat.

Background: Food is not equitably available. Deficiencies and generalizations limit national datasets, food security assessments, and interventions. Additional neighborhood level studies are needed to develop a scalable and transferable process to complement national and internationally comparative data sets with timely, granular, nuanced data. Participatory geographic information systems (PGIS) offer a means to address these issues by digitizing local knowledge.

In addition to the direct health impacts of COVID-19, government and household mitigation measures have triggered negative indirect economic, educational, and food and health system impacts, hitting low-and middle-income countries the hardest and disproportionately affecting women and girls. We conducted a gender focused analysis on five critical and interwoven crises that have emerged because of the COVID-19 crisis and exacerbated malnutrition and food insecurity. These include restricted mobility and isolation; reduced income; food insecurity; reduced access to essential health and nutrition services; and school closures. Purpose: To evaluate the effectiveness of two distinct interventions in improving outcomes for patients with knee osteoarthritis (OA) and varus alignment: 1) a 12-week minimally supervised therapeutic exercise program with nutrition recommendations, 2) and high tibial osteotomy (HTO).
Methods: This dissertation involved four studies. Participants were recruited as part of two separate ongoing prospective cohort studies evaluating clinical, biomechanical, and physiological outcomes following a) a 12-week exercise and nutrition program (studies 1-2) or b) HTO (studies 3-4) for knee OA. Background
Excessive gestational weight gain has increased over time and is resistant to intervention, especially in women living with overweight or obesity. This study described the process evaluation methods and findings from a behavioral lifestyle intervention for African American and white women living with overweight and obesity that spanned pregnancy (≤ 16 weeks gestation) through 6 months postpartum.
Methods

Despite the promise of Nutrition Facts label (NFL) use as a population-level intervention with broad reach, few studies have examined determinants of adolescents’ NFL use, and how this label use may be associated with nutrition behaviors. This study used data from the International Food Policy Study, an online cross-sectional survey of trends in dietary patterns and policy-relevant behaviors in the U.S. and five other countries. First, this study examined 1) whether NFL use was associated with healthy eating efforts and 2) whether there were sociodemographic differences in NFL use among U.S. adolescents.
