Allergy Training Or Lack Thereof, Madelyn Freeman, Mary Kate Klenke

Human Nutrition and Hospitality Management Undergraduate Honors Theses

Food allergies affect many people in our society today, and the food service industry must keep up with the demand for allergen-free food from their customers. The objective of this research is to gain insight from the employee’s perspective of the importance of food allergies and what training method would help them learn best. Through this research we intend to learn how we can engage employees during training, increase training retention, and stress the importance to change their behaviors and utilize safe practices in regards to allergens. We compared both quick and full-service restaurants’ food-allergy training methods in this study …

Autophagy Is Stimulated By Acute High Intensity Interval Exercise In Human Skeletal Muscle And Electrical Pulse Stimulation In C2c12 Myotubes In Vitro, Kurt A. Escobar Jul 2018

Autophagy Is Stimulated By Acute High Intensity Interval Exercise In Human Skeletal Muscle And Electrical Pulse Stimulation In C2c12 Myotubes In Vitro, Kurt A. Escobar

Health, Exercise, and Sports Sciences ETDs

Purpose: 1) To compare the effects of an acute bout of HIIT exercise (treadmill running) on autophagy to MICT exercise in human skeletal muscle 3 hours post exercise, and 2) to test an in vitro model of muscle contraction-induced autophagy using electrical pulse stimulation in C2C12 myotubes. Methods: Study 1: Ten recreationally active males and females completed a bout of high intensity interval training (HIIT) exercise and moderate intensity continuous exercise (MICT) exercise in a fasted state. Muscle biopsies from the vastus lateralis were taken pre and 3 hours post-exercise. Muscle tissue was analyzed for protein expression of markers of …

The Effects Of Exercise Training On Cardiovascular-Related Circulating Micrornas, Jacob Luther Barber Jan 2018

The Effects Of Exercise Training On Cardiovascular-Related Circulating Micrornas, Jacob Luther Barber

Theses and Dissertations

PURPOSE: MicroRNAs (miRNAs) are small regulatory RNAs that post transcriptionally modify mRNAs and control gene expression. Circulating miRNAs are significantly altered following a single session of exercise, however the effects of exercise training on the circulating miRNA profile is unclear. Therefore, the purpose of the present study was to determine the effects of endurance exercise training on the abundance of targeted circulating miRNAs and the association of changes in miRNA levels with concomitant changes in cardiometabolic traits, in a subsample of adults from the HERITAGE Family Study.

METHODS: This exploratory analysis examined 20 previously sedentary adults from the HERITAGE Family …
