The primary purpose of this study was to assess the factors that relate to male condom utilization among sexually active African American college women at The University of Tennessee.

College women between the ages of 18 to 24 are the most susceptible to contracting a sexually transmitted disease (STD) as they do not perceive themselves to be at risk. It is estimated that each year 12 million new cases of STDs occur and two thirds of those infected are under the age of 25 (Hale & Trumbetta, 1996). Sliced tomatoes are used frequently in restaurants and fast-food establishments. Their limited shelf-life has caused scientists to study treatments to prolong their useful life. Previously, treatments for shelf-life extension have included mild heat treatment and modified atmosphere packaging. Although gaseous ozone has been shown to reduce spoilage microorganisms on produce, limited research has been performed regarding the oxidation potential of ozone on antioxidant compounds. This study was conducted to evaluate the effect of various sanitizing treatments applied to cantaloupe rinds on survival of Salmonella. A five-strain cocktail of nalidixic acid resistant Salmonella was inoculated (~ 6 log cfu/cm2) onto the rinds of whole cantaloupes, which were then treated with tap water (control), chlorine dioxide solution (100 and 200 ppm for 30, 60 and 90 sec), peroxyacetic acid solution (40 and 80 ppm for 45, 90 and 150 sec), dimethyl dicarbonate solution (1000, 5000, and 10,000 ppm for 3 min), ozonated water (~1.66 ppm for 1, 2, 3, and 4 hours), steam …

Ultimate pH (the pH of meat 24 hr post-mortem) is one of the most important contributors to defects and reduced sensory and microbial shelflife of pork. The objectives of this study were to determine: (1) the effect of ultimate pH (pHu) of pork loin on its shelflife at the wholesale and retail level and (2) its influence on the growth of Salmonella Typhimurium DT104 in ground pork. Thirty-six pork loins (pH range = 5.56- 6.57) were collected at a commercial slaughter facility 24 hr post-slaughter. All pigs were from the same genetic line. This study examines Tennessee and Pennsylvania consumers’ market participation for environmentally certified hardwood products (oak table, oak shelving board, oak chair), obtains potential premiums paid for selected hardwood products, determines the effects of scope of certification and demographics on premium amounts, and builds profiles of consumers who are willingness to pay the premium for certified hardwood products.

Objective: To validate the multicultural nutrition counseling competencies for entry-level dietitians in the next 10 years.

Design: An expert panel was asked to review the original 46 competencies and make appropriate changes. Their responses were compiled and incorporated into a survey. The survey was administered by mail and consisted of 56 competency items that subjects rated on a Likert scale of 1 to 7 (1=Somewhat essential to 7=Absolutely essential). In eastern Tennessee there was a total of 17 cases of a La Crosse (LAC) encephalitis viral infection reported to the East Tennessee Department of Health in 2000. During that same time, 25 cases of other Central Nervous System Infection (CNSI) that were not La Crosse were also reported. Out of those 42 cases 11 were chosen to be revisited (6 Control and 5 LAC) and the nearby wooded habitats were surveyed. Geographic Information Systems (GIS) was utilized to plot each case location on various maps.

Hydrographic, sediment, and biological (chlorophyll a, bacteria, viruses, and macroinfauna) samples were collected on a several thousand mile long transect spanning from the Gulf of Alaska, through the Bering and Chukchi Seas, the Beaufort Sea, and into the Canadian Archipelago/Northwest Passage in the summer of 2000.

Water column hydrographic parameters (temperature, salinity, and chlorophyll a), water column bacterial and viral abundances and distributions, as well as benthic measurements of sediment bacterial and viral abundances and distribution, sediment grain size, and sediment organic carbon and organic nitrogen content were measured. Several recent reports from this laboratory demonstrate a regulatory role for intracellular Ca2+([Ca2+]i) in modulating lipid metabolism in both human and murine adipocytes, with increased [Ca2+]i coordinately stimulating lipogenesis and inhibiting lipolysis, thereby expanding lipid mass.
