Scientific evidence shows that dietary intake of the omega-3 polyunsaturated fatty acids is beneficial to human health. Fish oil is a rich source of omega-3 fatty acids. However, fish oil with high levels of omega-3 PUFA is very susceptible to oxidative deterioration during storage. The objective of this study was to investigate the effect of xanthan gum (XG)-locust bean gum (LBG) mixtures on the physicochemical properties of whey protein isolate (WPI) stabilized oil-in-water (O/W) emulsions containing 20% v/v menhaden oil. Development Of Tools To Assess The Effects Of Lunasin On Normal Development And Tumor Progression In Drosophila Melanogaster, Gillian E. Jones

Soy contains many bioactive molecules known to elicit anti-cancer effects. One such peptide, Lunasin, has been shown to selectively act on newly transformed cells while having no cytotoxic effect on non-tumorigenic or established cancer cell lines. In this study we attempt to understand the developmental effects of Lunasin overexpression in vivo and create reagents that will help us understand Lunasin’s anti tumorigenic effects in an intact organism. cDNA encoding lunasin and EGFP-lunasin were cloned into pUAST and microinjected into Drosophila embryos. Tissue-specific overexpression of EGFP-Lun in the resulting transgenic lines was accomplished by crossing transgenics to various GAL4 driver lines. …

goal of causing fear, economic instability, illness, or death. After the 2002 terrorist
attacks on the World Trade Center, the security of the food supply is of increasing

The cyclic nature of the beef industry is dependent on the supply and demand transaction initiated by consumers’ acceptability of quality meat products. When purchasing beef at the grocery store, consumers are dependent on USDA grades and visual appraisal; consumers expect consistency in products. Upon this appraisal, quality is determined by the color, marbling content, and texture of a particular retail cut, as well as cooked characteristics of tenderness, flavor, and juiciness. The objective of this study was to compare size-selective workplace protection factors (WPFs) of an N95 elastomeric respirator (ER) and an N95 filtering facepiece respirator (FFR) in agricultural environments. Twenty-five healthy farm workers ranging in age from 20 to 30 years voluntarily participated in the study. Altogether eight farms were included representing three different types: two horse farms, three pig barns, and three grain handling sites. Subjects wore the ER and FFR while performing their daily activities, such as spreading hay, feeding livestock, and shoveling. Tomatoes (Lycopersicon esculentum Mill) are one of the most popular vegetable crops grown for fresh market and processing in the U.S. Grafting involves the uniting of a shoot or bud scion with a rootstock to form a compound plant, mainly for managing soil-borne diseases and increasing crop yield. The objectives were to examine the effects of reciprocal and self grafts on tomato fruits, number of fruits, weight, and quality of the cultivars, ‘Cherokee Purple’, ‘Mister Stripey’, ‘Crista’, and ‘Maxifort’. Due to the recent changes in the economy of Kentucky tobacco production, some producers are seeking an alternative crop that will provide similar economic gains to tobacco without needing more acreage. Tomatoes are an existing crop in Kentucky that have been declining in acreage over the last five years. There is evidence to suggest that, through niche and local marketing, tomatoes may be able to fill the void left by tobacco. However, there is concern among producers that they will lose yield and/or quality if they switch to one of these niche production systems or cultivars.

Ten adult Quarter Horses (5 mares and 5 geldings) were placed in dry lot for 90 days and allowed free choice access to a diet consisting of average quality orchard grass hay, salt and water. The horses were then allowed free choice access to early-growth annual ryegrass pasture, salt and water for a 28 day period. Random hay and grass samples were analyzed for nutrient content. Blood samples were collected at 6 am, 8 am, 6 pm, and 8 pm on the final day of hay consumption and on the 4th, 9th and 28th days of grass consumption. Samples were …

Field studies were conducted during the summers of 2007 and 2008 at the Agricultural Research and Education Complex, Western Kentucky University, Warren County, KY and commercial production fields in Caldwell County, KY, Warrick County IN, and Vanderburgh County, IN. With the outbreak of autoimmune diseases, pathogenic yeasts have begun to pose a serious medical threat. This threat is compounded as more of these yeasts evolve resistance to existing antifungal drugs. In the ever-widening search for new, effective antifungal treatment, the realm of herbal medicine offers some interesting and potentially valuable alternatives. Origanum vulgare is one herb that has demonstrated broad spectrum antimicrobial activity against bacteria and fungi alike.
