This project was undertaken as a result of conversations initiated by members of the Spartanburg Academic Movement (SAM) about the desirability of qualitative data to contextualize quantitative data generated by the use of a validated national instrument in Spartanburg County Schools. SAM is a nonprofit and community movement that facilitates the discussion of shared information and intentional, collaborative, and strategic work by cross-sector partnerships in order to foster high levels of academic attainment for all children in Spartanburg County. Food Preferences Among Children At Arcadia Elementary School, Laurel Lee

My research, conducted from September through November of 2017, showed that the children preferred more processed foods and starches instead of healthier options such as fruits and vegetables, even when healthy options were available. According to the parents/caregivers surveyed, their children prefer to eat processed American meals. Parents/caregivers desired for their children to eat a variety of different foods including fruit, vegetables, proteins, and traditional Hispanic food. This study acknowledges that healthy meal options are available at schools, but there needs to be more research on how to best encourage students to take advantage of these nutritious choices in order …

From the very beginning of my research, I have been interested in sustainability and what it means to be sustainable. I was previously partial to environmental sustainability but came to the realization that understanding social sustainability is a more relevant and important topic for the Northside at this time. When a neighborhood is socially sustainable, they are investing in the next generation, building sincere relationships founded on trust, are adaptable, and have networks with civil society organizations such as schools, churches and businesses. In response to a growing local interest in “place-making” work, our team developed and carried out a research project centered on the ideas of inclusive place, community, and health, with a focus on the inclusion of the growing Latinx community in the Spartanburg area. The project is a first step in what we imagine to be a long arc of community-based research and is in response to the desire of community collaborators for better information to inform their decision-making, particularly with regard to inclusion of Latinx residents.
