Previous studies have found that professionalism is an important success factor for chefs. Yet, research on what professionalism “means” to chefs, and how they “make sense” of it, is currently underexplored. While there is some evidence of the significance of the traditional chef’s uniform in professional identity formation, it also needs further consideration. Culinary arts lecturers and chefs have already contributed to these discussions, but the student voice remains largely unknown. The concept ‘cultural flashpoint’ (CF) has not been fully defined or described. The authors test this concept through the prism of a controversial gender-focused Irish school programme, Exploring Masculinities (EM). Adopting an instrumental case study methodology, they use media content analysis to develop a temporal trajectory of the CF, describe its shape, explicit and implied contentious themes, and its process. Concurrently, service-learning is another educational activity becoming more popular in higher education institutions. Very little research has been done on the impact on the community from a service-learning perspective, especially as a part of a study abroad. The purpose of this qualitative cross-cultural case study was to better understand how Muslim students living in Australia, Ireland, and the United States navigated racism to identify ways in which school leaders and teachers can better address the structural, historical, and socioeconomic roots of racial injustice, discrimination, and ongoing oppression. Data collection was guided by a shared interview protocol that asked questions regarding family background, personal interests, identity, and friendships with a focus on their experiences of anti-Muslim racism in secondary schools. This study examines Black Minority Ethnic social care students’ experiences in Ireland and is located within the parameters of a number of key global events that occurred in the last decade. It provides critical insights into the students lived experiences of migration, resettlement, employment, higher education and social care scholarship.

Theoretically the thesis is grounded in Critical Race Theory (CRT) drawing on the key tenets of race as a social construction, interest convergence, White privilege, storytelling and intersectionality. Higher Education Institutions (HEIs) have been called to lead global health promotion actions, yet there remains a dearth of empirically informed ‘Healthy University’ (HU) initiatives. This thesis constituted a baseline mixed methods needs assessment to inform a settings-based health promotion (HP) initiative (‘A Healthy MTU’) within a multi-campus ‘case’ HEI in Ireland (Cork campuses of MTU, formerly CIT). Specific aims were to (i) investigate student and staff health metrics, and (ii) identify the cultural and environmental determinants of health and wellbeing within the case HEI setting. Educational disadvantage continues to be a cause for concern, and addressing it remains at the forefront of education policy in Ireland (Houses of Oireachtas, 2019; Weir et al., 2017). This research extended across the academic years 2019-2020 and 2020-2021 and during the period of the global COVID-19 pandemic, which imposed public health measures, and enforced an emergency online digital learning environment. A socio-economic profile of Ireland’s student body registered an attainment gap between rich and poor, finding that young people from backgrounds of disadvantage continue to be underrepresented at third-level when compared to their middle-class counterparts (HEA, 2020). The processes of formulation of language policies have not been researched thoroughly. This paper aims to explore the relationship between ideas, power and agency in language policy-making and specifically with reference to the formulation of language-in-education policy for multilingualism in Ireland. Through an argumentative approach to language policy and using a discursive institutionalist framework, the paper examines data from policy documents and interviews with policy actors in the Department of Education and Skills. For many years, food was seen as too quotidian and belonging to the domestic sphere, and therefore to women, which excluded it from any serious study or consideration in academia. This chapter tracks the evolution of gastronomy and food studies in Ireland. It charts the development of gastronomy as a cultural field, originally in France, to its emergence as an academic discipline with a particular Irish inflection. This paper presents the experience of eight Irish academic libraries from the Technological Higher Education Association (THEA) from March – August 2020 while delivering library services during the COVID-19 pandemic. It presents a snapshot of their experience at this time outlining the challenges faced by libraries in closing their doors and pivoting to delivering library services only. For much of this time library buildings were closed to students thereby making, study desks, group spaces, PCs, access to collections and to library staff at information desks unavailable. Childminding In Ireland: Attitudes Towards Professionalisation, Miriam O'Regan, Ann Marie Halpenny, Noirin Hayes

In light of rapid changes in the early years sector in Ireland since 2000, questions arise about the professionalism of childminders (family day carers), the vast majority of whom are exempt from regulation. Fewer than 0.1% (<120) of childminders are registered with Tusla, the national regulator, despite the National Childminding Initiative, (NCMI) which has promoted professional, high quality childminding. To investigate current attitudes to NCMI’s process of professionalisation (Brannen and Moss [2003]), among childminders and parents, a cross-sectional study was designed using a mixed-method approach. Specifically an anonymous online survey was conducted with 325 participants, followed by a qualitative World Café forum for 40 members of Childminding Ireland, the national childminding body. Findings from both phases of research revealed many of these childminders were well-qualified and engaged, with a sense of professional identity, seeking a distinctive approach to support childminding. Moreover, both childminder and parent participants value the distinctive characteristics of childminding – close relationships, a nurturing pedagogy, a rich, home environment – to a greater extent than markers of professionalism. These findings call for an innovative approach to childminding in Ireland, one that facilitates an organic development of agentic, professional childminding as part of a competent ECEC system.

Prevention of childhood obesity is a global priority. The school setting offers access to large numbers of children and the ability to provide supportive environments for quality physical activity and nutrition. This article describes Project Energize, a through-school physical activity and nutrition programme that celebrated its 10-year anniversary in 2015 so that it might serve as a model for similar practices, initiatives and policies elsewhere. The programme was envisaged and financed by the Waikato District Health Board of New Zealand in 2004 and delivered by Sport Waikato to 124 primary schools as a randomised controlled trial from 2005 to 2006. …

Children are very much under-represented in heritage tourism studies, particularly in terms of their own perspectives. This exploratory study begins to redress this imbalance by investigating how 34 primary school-going children experience and make sense of the Battle of the Boyne Visitor Centre, an Irish heritage site. The rapidity of change in Irish early childhood policy over the last 20 years is clear to observers (OECD 2004). What may be debated is how significant the changes are. In this paper, we analyse changes in early childhood education and care policy in Ireland since 1995, using Hall’s (1993) typology of policy change to help understand how policies and institutions could change so much in appearance without changing their fundamental features or underlying philosophy. As Dirk van Damme suggested (van Damme, 2009), the effects of the global financial crisis (GFC) have been manifold and complex and affected countries differently. Australia and Ireland have fared very differently in the GFC so choices will inevitably have been influenced by their relative capacity to spend on higher education. Since 1988 Australia has had a unitary, government-regulated but independent higher education system with block funding from a combination of government allocations and student contributions. In 2007, Fáilte Ireland's Environment Unit, in collaboration with the Education Policy Section,commissioned a review of sustainability content in tourism education and training programmes at NQAI levels 4-8 throughout the State with a view to recommending improvements where necessary.

The review, carried out on Fáilte Ireland's behalf by the Tourism Research Centre of the Technological University Dublin, was - in terms of breadth and depth - the first of its kind to be undertaken at a national level, not only in Ireland but in any of the other countries surveyed during the course of the review.

The Effective Pre-school Provision in Northern Ireland (EPPNI) project investigated the effects of pre-school education and care on children's development for children aged 3-8 years old. The EPPNI team collected a wide range of information on over 800 children who were studied longitudinally until the end of Key Stage 1. Data were collected on children's developmental profiles (at ages 3, 4, 5, 6, 7, and 8 years), background characteristics related to their parents, the child's home learning environment, and the pre-school settings children attended.
