Objective: Dietetics education transitioned to competency-based education (CBE) in July 2022. Despite its benefits, managing competencies may be a challenging aspect of CBE for dietetics program and internship directors (PDIDs), yet it is unclear what specific aspects of competency management are difficult. Using design thinking, this study sought to capture the impact recent CBE implementation had on PDIDs by identifying specific pain points (i.e., challenges) related to competency management. The results of this work serve to document such pain points and may be used to generate solutions to address or eliminate the pain points. For example, this research can support …

Background: Dietary pattern assessment by healthcare providers leads to a better understanding of usual intake and evaluation of nutritional status, systemic health, and disease. Interprofessional team members can use such information to provide interventions leading to improved health outcomes. Objective: The aim was to explore the dietary patterns of adults seen in a dental clinic using the Rapid Eating and Activity Assessment for Patients (REAP) tool. The purpose of this honors graduation thesis is to analyze the role of nutrition in the prevention, management, and treatment of chronic diseases and to argue that clinical nutrition should be reintegrated into American medical education as a high priority subject. The thesis begins with a historical review of clinical nutrition beginning in the fifth century B.C. with Hippocrates in Classical Greece and ending in 21st century America. Following the historical review, five of some of the most prevalent chronic diseases in America are examined through a nutritional lens. Purpose: The purpose of this study was to describe student perceptions of their learning following experiential learning (EL) activities in a foodservice management course. Nutrition and dietetics education programs have a range of competencies students must learn and demonstrate throughout their curriculum. Learning styles differ amongst students and research has demonstrated they prefer to engage in EL (direct experience) activities to develop their knowledge. Foodservice management is one area of the curriculum that teaches students the basic functions of management; planning, organizing, directing, controlling, and staffing related to food, materials, facilities, and human resources. Objective: The purpose of the DNP project was to improve nutritional knowledge of the adolescents at Kings Canyon Unified School District while also improving their perceived ability to choose healthy food. This project was enveloped in a larger community outreach mission utilizing a free school-based clinic for the purposes of providing sports physicals to students and health screening and physicals to the community. Additionally, nurse practitioner students engaged in a cultural immersion experience through clinical rotations in Central Valley.

In Southbury, Connecticut, diabetic diet management is an issue that perturbs both primary care providers and their patients. This project seeks to ameliorate the lack of readily available resources for diabetic dietary considerations. A brochure was made including helpful dietary information for patients that are unable or unwilling to see a Certified Diabetic Educator. As the incidence of diabetes continues to rise, patient education will be a powerful tool to help patients manage their diabetic care.

The purpose of this study was to identify how multiple influencing factors on nutrition education, relating to professional development, teacher self-efficacy, teacher beliefs, program use, wellness policies, and environmental factors, influence the amount of time elementary educators spend teaching nutrition in their classrooms. The primary tool for data collection was a comprehensive survey developed using Qualtrics software. The survey was distributed to Maine superintendents and principals who were asked to pass the survey along to K-5 teachers. The Islamic Foundation of Lincoln is a growing population within Lincoln including many different racial backgrounds, ethnic identities, and languages. Due to these various backgrounds communication may impair the education of families as well as their attitudes and behaviors. Research has indicated that despite the many risk factors associated with T2D, alterations in dietary macronutrient composition can lead to improvements in disease management and resultant complications. Fruit and vegetable (FV) intakes in MS children remain lower than recommended. Theory-based, multi-component nutrition education interventions like Farm to School (F2S) target FV consumption and utilize such interventions to improve children’s dietary behaviors by incorporating nutrition and agriculture education. Purpose: Educating adolescents about energy balance (EB) is essential for effective weight control. This study utilized the Sensewear (SWA) armband and a diet journal to promote adolescents' EB knowledge and motivation.
Methods: Ninety sixth graders were randomly assigned into the experimental group (n = 46) who utilized SWA and diet journal for 7 consecutive days or the control group (n = 44) who did not. Both groups were pre-and post-measured on EB knowledge, situational interest, and weight. The experimental group was tracked on motivation effort, energy expenditure (EE), and energy intake (EI).

Neighborhood characteristics, such as healthy food availability, have been associated with consumption of healthy food. Little is known about the influence of the local food environment on other dietary choices, such as the decision to consume organic food. We analyzed the associations between organic produce consumption and demographic, socioeconomic and neighborhood characteristics in 4,064 participants aged 53–94 in the Multi-Ethnic Study of Atherosclerosis using log-binomial regression models. Participants were classified as consuming organic produce if they reported eating organic fruits and vegetables either “sometimes” or “often or always”. This paper responds to Michael Merry’s recent contribution on childhood obesity. Merry’s analysis highlights the difficulties in finding an appropriate balance between children’s and parents’ interests in antiobesity interventions and emphasizes the importance of weight stigma and its effects on the obesity debate. He concludes by recommending both a greater focus on policies that address society's contribution to childhood obesity and a greater involvement of obese individuals in the policy debate. A Comparison Of Job Responsibility And Activities Between Registered Dietitians With A Bachelor's Degree And Those With A Master's Degree, Stephanie M. Pillow

Minimal educational requirements for Registered Dietitians (RDs) include a bachelor’s degree and practice program. Recently, a master’s degree was recommended. Studies have not established whether education affects employment. A secondary analysis of 2005 Dietetics Practice Audit data determined whether job responsibility, individuals supervised, and activities differed between 1,626 bachelor’s RDs (B-RDs) and 767 master’s (M-RDs) RDs, registered ≤5 years. Chi-square and ANOVA analyzed differences between B-RDs and M-RDs, at entry-level (0-3 years experience) and beyond-entry-level (3+-5 years experience). Beyond-entry-level B-RDs (31.8%) and entry-level M-RDs (31.9%) reported “supervisor/executive” responsibility more than entry-level B-RDs (26.5%; p=0.01). A higher percentage of M-RDs supervised …

The objective of this study was to explore the impact of nutrition education on the nutritional intake of female high school students. Two groups of females from Saline High School (Saline, Michigan) participated in the study. Age, height, weight, and activity level were obtained from each student in the control group (N=5) and the experimental group (N=17). Participants also completed a demographic survey and a 3-day food diary (two weekdays and one weekend day). No significant differences were found between the groups in age, weight, height, or Body Mass Index (BMI). Diet analysis of the three-day food diaries showed significant …
