Probiotic Yoghourt For Health, Nutrition And Women's Empowerment In Kenya: A Community-Based Approach, Ellena Andoniou

The dissertation aims to examine the impacts of probiotic yoghourt on health, nutrition and women’s empowerment within the context of HIV/AIDS in Kenya. Mixed methods that combine quantiative and qualitative approaches are used to understand the effects of probiotic yoghourt on the health, nutrition and quality of life for men and women. Results of the quantiative analysis (n=227) demonstrated that the probiotic yoghourt confers a variety of health benefits – physiological (fewer urogenital conditions and digestive problems; reduced dependence on medical treatment), and psychological (perceived improvements with bodily appearance, felt an increased meaningfulness with life). This literature review examines the impact of various mindfulness-based interventions (MBIs) on the obesity-related eating behaviors of stress eating, emotional eating, and binge eating. With the inconsistency of the weight loss industry to provide long-term weight loss results, the United States is in need of alternative methods of weight loss and weight maintenance to combat the current overweight and obesity epidemic. MBIs are thought to be beneficial when targeted at behaviors of weight gain because mindfulness promotes an individual’s awareness of present physical and emotional sensations within the body, including hunger and satiety cues. Background: Several investigations have examined the influence of television and portion size on intake. Results have found that watching television while eating or being provided larger portions increases intake. However, no investigation has examined the combined effect of these variables on food intake, when these factors are combined they may enhance consumption.

Background: Previous research has shown the potential of increasing vegetable intake by incorporating the senses into interventions. However, little to no research has specifically looked at the impact that the use of the senses can have on intake of vegetables among preschool-aged children.
Purpose: The aims of this study were to examine if mean intake of vegetable snacks and/or willingness to try the vegetable snacks would be significantly higher among preschool-age children who participated in a visually appealing and interactive snack activity compared to children who received control vegetable snacks.

As we age, the risk for gut issues, such as smooth muscle tone, may be an underlying indirect or direct cause or risk factor for many age-related issues, such as frailty. Consequences of decreased motility and depleted epithelial barrier may result in nutrient deficiencies that may increase the risk for malnutrition (Brownie, 2006). Further, there is increasing evidence that there is a gut-brain-axis relationship that may influence cognition and mental health issues, such as depression and anxiety. Objective: This study evaluated and compared male and female college athletes’ dietary habits, their general nutrition knowledge, and understanding of their daily metabolic requirements during training and non-training days. The goal was to 1) determine whether a nutritional gender gap existed between male and female college athletes and 2) assess whether the level of nutritional knowledge of student athletes was generally sufficient to meet their sex- specific dietary needs.

The purpose of this study was to determine if green eating (GE), defined as environmentally conscious eating, in college students had an impact on BMI, health behavior, fruit and vegetable intake, physical activity, and perceptions of the campus environment. This was a cross-sectional study of undergraduate and graduate students (n=190) at the University of Maine. The GE Survey was used to determine GE stage of change; participants were classified as either pre-action (precontemplation, contemplation, preparation) (n=113) or post-action (action, maintenance) (n=77). Purpose: Brain Derived Neurotrophic Factor (BDNF) is part of the superfamily of neurotrophins including: nerve growth factor (NGF), neurotrophin-3 (NT-3) and neurotrophin-4 (NT-4). Recent evidence suggests that aerobic activity can increase BDNF levels both during and following exercise. Likewise, dietary habits have been shown to alter BDNF levels. However, nothing is known about the effect of BDNF levels during aerobic activity under specific dietary interventions. BACKGROUND: Gestational Diabetes Mellitus (GDM) is defined by glucose intolerance detected with the onset of pregnancy, and if gone undetected and untreated, can lead to morbidities for the mother and baby. Implementation of nutrition counseling can work to reduce the risk of complications through dietary modification promoted and adopted during pregnancy. Follow-up is important, as individual assessment is used to modify recommendations. Abstract
Objective: To determine if collegiate athletic trainers meet the current national recommendations for a healthy weight, diet and physical activity.
Design: The research was a cross-sectional design consisting of a self-constructed survey formulated using the 2010 Dietary Guidelines and 2009 Academy of Sports Medicine Physical Activity Recommendations.
Subjects: One- thousand randomly selected athletic trainers were contacted to participate. One-hundred and five participants (10.5% return rate) completed the survey. All were District 3 members of the National Athletic Trainers Association.

Poverty is a major health barrier in the United States which disproportionately affects women, who earn lower wages than men and are often single mothers responsible for the care and wellbeing of their families. Chronic socioeconomic depression is a cyclic, multigenerational problem that can make it difficult for women to adequately engage in healthy behaviors such as eating well and exercising. The problem addressed in this phenomenological study is how culture and acculturation can potentially influence gestational weight during pregnancy, leading to overweight and obesity among immigrant Latinas. To understand the possible influence of culture and acculturation on the diet, exercise, and weight of pregnant immigrant Latinas, the experiences of immigrant Latinas who had undergone a pregnancy in Mexico and were pregnant in California were examined. The ecological model theory was applied as a framework for exploring the participants' experiences regarding nutrition, physical activity, and weight gain. There are low retention rates of dietitians and this impacts quality of care. Emotional intelligence (EI) may be the missing component to improve retention, due to EI increasing job satisfaction and decreasing burnout for other health providers. The purpose of this study was to examine the relationship between EI, job satisfaction, and burnout for dietitians. The theoretical framework utilized was the 4-branch model of EI. Improving the nutritional status of hospitalized patients has been shown to reduce length of stay (LOS), hospital costs, readmission rates, complication rates, and mortality. Provision of nutrient-rich, liquid, oral nutrition supplements (ONS) is one approach to improving nutritional status. ONS use has been associated with improved outcomes among patients with diagnoses of orthopedic injuries and pressure ulcers, mainly using prospective designs among elderly and/or malnourished patients. Objective: To explore the disparity between number of students completing degrees in dietetics, students matched to internships, and current and projected field needs. Methods: An electronic survey covering a variety of factors potentially affecting internship accessibility was distributed to 251 internship program directors, 200 preceptors, and accreditation board, staff, and review members. Results: Of 193 total respondents, 60% agreed that accreditation competencies prepared dietetic interns well and that internship costs may hinder diversity among interns. Seventy-two percent of program directors (n=115) reported difficulties in preceptor recruitment and 56% reported difficulties in preceptor training/orientation. Research suggests diet intake among adults lacks in healthfulness, which contributes to poor quality of life and increased disease outcomes. This study assesses the relationship between diet quality, using the Healthy Eating Index (HEI), and presence of physical activity (PA). Participants included 11,167 adults ≥ 20yrs with valid NHANES 2007–08 and 2009–10 diet interviews and PA questionnaires. Subjects were divided into sedentary, 1–149 minutes per week of PA (moderate exercisers) and ≥150 minutes per week PA (meets or exceeds PA guidelines) groups based on guidelines set by the Department of Health and Human Services. Athletic trainers (ATs), nutritionists/RDs, strength and conditioning specialists (SCSs), and other athletic department personnel may be available to student-athletes and can be solicited for nutrition advice. Multiple studies have found that although some universities have a sports nutritionist on staff, student-athletes approached an AT most often for nutrition advice rather than an SCS, nutritionist or other person. Due to the recent rise in antibiotic resistant pathogens, and the difficulties surrounding the quest for new antibiotics, many researchers have started revisiting antibiotic interactions in hopes of finding new treatment options. The primary outcome of this project was to examine the efficacy of concomitant antibiotic use under varying nutrient conditions, to identify variations in antibiotic interactions. Antibiotic interactions were studied, utilizing E. coli as a model bacterial system, grown in four different media types. The purpose of this study was to determine if the amount and variety of fruit and vegetable intake increased among community-dwelling older adults participating in Kentucky’s congregate meal site program following a series of educational nutrition lessons. A convenience sample (n=35) of community-dwelling older adults at two intervention (n=19) and two control (n=16) senior centers in central Kentucky participated in this quasi-experimental pre-post pilot study.
