Mississippi leads the nation in child obesity, chronic diseases, poverty, and food insecurity. Stemming the long-term consequences of high obesity rates will require a cultural attitude and behavioral shift towards healthy eating. This study explored the perceptions, beliefs, practices, and self-efficacy towards healthy eating among limited resource Mississippi parents to inform a SNAP-Ed social marketing campaign. A statewide telephone survey was conducted with income-eligible or current SNAP recipients who provided or prepared food for children in their household. Likert-type scale questions measured intrapersonal factors, self-efficacy, and practices regarding healthy eating, such as shopping and meal planning. A total of 206 …

Physical inactivity is a growing problem among children, particularly schoolaged youth. Research suggests children are especially prone to inactivity in the summer months when access to structured school-time and extra-curricular activities is reduced. Community programs like residential summer camps offer an excellent environment for engaging children in enjoyable physical activities while also helping them learn to be more physically active when they return home. Pre-existing attitudes often influence how much change a program inspires in an individual. Beginning at the critical preschool level, preventing childhood obesity is a multifaceted challenge with health, economic, ethical, and social implications. In particular, increasing emphasis will be placed upon educating children and their caregivers about the USDA’s MyPlate model of good nutrition. To date, evidence-based efforts to teach preschool children nutrition facts and appropriate behaviors are limited, and developers of evidence-based practices do not appear to use formative-evaluation to an adequate extent. Crucial among these evaluations is assessing what the preschool child already knows about the MyPlate components (fruits, vegetables, grains, protein, and dairy).
