In March 2020, the coronavirus 2019 (COVID-19) pandemic began to spread across the United States. The pandemic disrupted the food system in an unprecedented fashion, exacerbating existing inequalities and contributing to increased rates of food insecurity and charitable food use. This research project considers the food system of Buffalo, New York and seeks to capture the way in which both food insecure households and the food pantries that serve them adapted to the pandemic. Using data from 75 client surveys, 52 qualitative semi-structured interviews with food pantry staff and clients, and 15 participatory GIS mapping interviews, this mixed-methods project describes …

Gestational weight gain outside the recommended ranges puts women at risk for pregnancy complications and adverse birth outcomes. Food insecurity and environmental factors including neighborhood deprivation may influence gestational weight gain. This research 1) examines the impact of neighborhood deprivation on gestational weight gain, 2) identifies if the association varies by selected maternal characteristics, 3) examines the relationship between food insecurity and gestational weight gain, 4) determines if stress mediates the relationship between food insecurity and gestational weight gain, and 5) examines whether selected maternal characteristics mediate this relationship. Food Insecurity And Hunger Experiences And Their Impact On Food Pantry Clients In The Tampa Bay, Nora Brickhouse Arriola

Since 1999, there has been a significant increase in the number of food insecure individuals in the United States. The Great Recession (2007-2009) and slow economic recovery has led to additional increases in rates of food insecurity and the usage of emergency food assistance programs. Thirty qualitative interviews with individuals seeking emergency food assistance at a Tampa Bay food pantry were conducted. Interviews focused on collecting the life experiences of participants, the barriers they face in having food security, their strategies to cope with limited food budgets, and how food insecurity impacts their household's overall health and wellbeing.
