Afghanistan and Iraq war student-veterans have increased in population on college campuses in the United States (U.S.) as a result of using the Post 9/11 GI Bill. Healthy Campus 2020 (American College Health Association, 2012) highlighted the importance of college student wellbeing, health promotion and disease prevention, while the U.S. Department of Veteran Affairs has called for an approach to services that is strength based (United States Department of Veteran Affairs, 2008). Cultural adaptations to mental health treatment have been recommended to improve treatment outcomes in minorities, including Hispanics (Griner & Smith, 2006). One such adaptation includes matching the therapist to the client on culturally salient variables, such as spoken language or ethnic background. Yet, most investigations about the efficacy of matching have been correlational or have not examined language and ethnic match together (Cabassa, 2007). Research has repeatedly demonstrated a disparity between need and utilization of mental health services for Latino adults and children. The adapted Health Beliefs Model (Henshaw & Freedman-Doan, 2009) provides a useful framework for conceptualizing the roles of perceived severity and therapy expectations in the relation between demographic variables and service utilization. Cultural variations in perceptions of mental illness by Latinos may be linked with lower service utilization rates for Latino parents and children. Human noroviruses (HuNoV) are the most common cause of foodborne disease outbreaks in the United States and the most common food commodities implicated in HuNoV outbreaks are leafy greens; however, the vehicle of transmission and point of contamination are often unknown. Campylobacter is the leading cause of foodborne illness worldwide and human illnesses are often associated with consumption of poultry or poultry products. Many strategies have been tried to eliminate Campylobacter from poultry with limited success. One of the strategies to reduce Campylobacter colonization in poultry is by use of probiotics. We conducted 2 separate studies to evaluate the efficacy of probiotics against Campylobacter in broiler chickens. Physical, mental, and emotional changes can occur throughout the aging process, making it important to treat different age groups as separate populations when researching body image. Yet, very few instruments have been validated for middle-aged and older adults. An online survey was used to perform a validation of the Body Image Quality of Life Inventory (BIQLI) and examine demographic relationships, with a sample of 947 women, ages 40-79, from across the United States. To date, research paradigms using alcohol-related stimuli have been limited in their reliability and generalizability due to a lack of published studies examining the psychometric properties of alcohol cues. The primary aim of the current study was to examine the factor structure of a set of alcohol cues and the associated validity and reliability of examining craving for alcohol in an alcohol cue-reactivity paradigm. The dissertation consists of three chapters exploring the effect of school program and neighborhood environment on childhood obesity outcome using individual panel data set of Arkansas public schoolchildren.

The first chapter (Section 2) investigates how the Fresh Fruit and Vegetable Program (FFVP), a program that provides funding for the distribution of free fresh fruits and vegetables to students in participating schools, affects childhood obesity. We combine matching methodology and difference-in-differences analysis to estimate the effect of the FFVP on childhood BMI outcomes.
