Background: Registered Dietitian Nutritionists and other health professionals should be involved in advocacy efforts related to food access and health care. However, education about, and opportunities to actively participate in, public policy are often limited for dietetics students. The goal of this project was to identify how dietetics programs meet ACEND standards relating to public policy in their current and/or accredited program. Methods: An online survey was sent to dietetics faculty at U.S. higher education institutions. Objective: Knowledge and competence in sustainable food systems is a priority in dietetic programs and outlined in program accreditation standards and standards of practice for Registered Dietitian Nutritionists (RDNs). However, limited literature exists on how students are learning about sustainable food systems. The purpose of this study was to explore dietetic student experiences and perceptions after the inclusion of a farm-based experiential-learning activity. Methods: A qualitative approach was utilized to explore student reflections following their experiential-learning with sustainable food systems via university-based farms. Students completed sustainable food systems modules and completed five hours on the university farm. Students then wrote …

Objective: Dietetics education transitioned to competency-based education (CBE) in July 2022. Despite its benefits, managing competencies may be a challenging aspect of CBE for dietetics program and internship directors (PDIDs), yet it is unclear what specific aspects of competency management are difficult. Using design thinking, this study sought to capture the impact recent CBE implementation had on PDIDs by identifying specific pain points (i.e., challenges) related to competency management. The results of this work serve to document such pain points and may be used to generate solutions to address or eliminate the pain points. For example, this research can support …

Clinical supervised practice experiences offered through dietetic internships have historically been among the most challenging to obtain. The COVID-19 pandemic heightened the scarcity of these experiences and forced dietetics education programs to offer alternative experiences in the absence of direct patient care opportunities. Simulation-based learning experiences (SBLE) or objective structured clinical examinations (OSCE) are one method of providing these alternative options, and if effective, could be routinely incorporated into dietetics education. This review evaluates five original research articles to determine the effectiveness of simulation-based learning on perceived or observed clinical competence in dietetic students. Background: Dietitians are not frequently participating in or leading research. Cultivating greater research interest and involvement starts with dietetics education, but little is known about dietetics students’ research involvement and interest. This study examines relationships between research involvement and interest among graduate dietetics students. Methods: This study was a cross-sectional survey design incorporating participant characteristic data, the Practice-Based Dietitian Research Involvement Survey (PBDRIS), and the modified Interest in Research Questionnaire (IRQ) tools; 89 of 327 (27.2%) graduate dietetic students from 3 US universities were included. There is a lack of tools and training to assist in salary and benefit (S&B) negotiations within the nutrition profession. This study is the first to analyze thoughts, feelings, and experiences with S&B negotiations among nutrition and dietetics professionals. The 32-item, web-based, cross-sectional survey study was completed by English-speaking individuals of any gender who identified as a “nutrition and dietetics professional,” were 18 years of age or older in the United States or US Territory. The Academy of Nutrition and Dietetics is currently promoting the advancement of cultural humility as a means for nutritional professionals to better appreciate the lived experience and identities of others as well as the power dynamics that create health inequalities. At the same time, the Academy has struggled to advance services to underserved populations such as those with Intellectual and Developmental Disabilities (IDD) and autism spectrum disorder. Here the authors argue that both goals can be achieved by involving nutrition students in the teaching of food preparation skills to individuals with IDD. Abstract: The purpose of this collective case study was to explore the diffusion of interprofessional education (IPE) in response to specific Future Education Model (FEM) Graduate Program accreditation standards and performance indicators. Data were collected via semi-structured interviews with a purposive sample of 12 FEM program directors from geographically diverse US states. Website and document review were triangulated with the interview data, and Roger’s Diffusion of Innovation (DOI) was used as a theoretical framework to add dimension to the study. Background: Dietary pattern assessment by healthcare providers leads to a better understanding of usual intake and evaluation of nutritional status, systemic health, and disease. Interprofessional team members can use such information to provide interventions leading to improved health outcomes. Objective: The aim was to explore the dietary patterns of adults seen in a dental clinic using the Rapid Eating and Activity Assessment for Patients (REAP) tool. Returning to university life following concussion can be challenging for students. Our Brain Health Collaboratory, in conjunction with the Center on Brain Injury Research and Training, developed set of online resources to inform college faculty members about brain injuries. The module includes information about concussion effects, academic and environmental accommodations, and the role of college faculty in providing support. The onset of the COVID-19 pandemic has exacerbated conflict dynamics and humanitarian disasters around the world, including Syria, Yemen, and East Africa. I walked into the classroom feeling nervous. It wasn't my first time teaching undergraduate students about human endocrine physiology. I knew the material well. But today's lecture was different. I pulled up slides depicting a hypothetical cancer patient and told them, “Patient X had a biopsy that detected invasive carcinoma in her breast.” I described the many months of chemotherapy, surgery, and radiation treatments she went through before going into remission. Then I taught the students about the hormonal therapy she was prescribed—drugs her doctor hoped would limit the growth of any remaining cancer cells and prevent a recurrence. On …

The Physiology Majors Interest Group (P-MIG), a grassroots organization of educators, has collected data on the history and characteristics of Physiology and highly related undergraduate programs (ex: Human Biology, Pre-Medicine, Biomedical Sciences, etc.) that serve a common population of prehealth students. Data was obtained as part of an online survey sent out to P-MIG conference attendees at the 2017-2019 annual meetings (n=30). Participating institutions indicate that 25.9% have degrees called Physiology aligned with 28% being housed in a department of physiology, 75.9% are a Bachelor of Science program, 34.9% are affiliated with a College of Arts and Sciences, and 80% …

The aim of the 2019 Student Survey was to inform the Physiology Majors Interest Group (PMIG) of characteristics of undergraduates enrolled in physiology courses or degree programs from across the United States, to be used as one input source for development of program-level guidelines. 1389 participants from seven universities completed the 2019 P-MIG Student Survey. 37% reported enrollment in a physiology/human physiology major; allied health related programs were the second most common (24%). 61% of respondents reported attending a community college, the majority of whom enrolled in one or more courses at a community college while in high school (44%). …

The City Commission in my hometown of Dayton, Ohio recently adopted a resolution declaring racism a public health crisis. In doing so, Dayton joins municipalities around the country, as the global pandemic of coronavirus COVID19 swirls around us. The Commission gave compelling reasons for their action, citing the disparate rates of poor health outcomes in African American communities, as well as disproportionately high rates of poverty, unemployment, economic distress, homelessness, incarceration, and inadequate education.1 The Commission’s commitment to remedy these inequities is welcome. Academic advising outcomes can be linked to both student success and retention. Yet relatively little is known specifically related to advising in physiology programs. Pro- fessional organizations dedicated to academic advising in general, and more specifically advising future health professional students exist, yet, whether current physiology programs utilize these resources remains unknown, as does a number of other demographic informa- tion about advising in physiology programs. Undergraduate degree programs named “Physiology” have existed for over 50 yr. The number of programs and enrolled students have been growing since ~2005 (5, 9). There are many thousands of students currently enrolled in physiology pro- grams across the United States and indeed across the world. Despite the long history and current popularity of the physiol- ogy major, there is no coordinated plan articulated for the design, administration, or assessment of degree programs in physiology at the undergraduate level.

Since 2011, the ongoing conflict in Syria has displaced millions of individuals, many of whom are now resettled across foreign borders. The US currently hosts 21,000 Syrian refugees, and of these, at least 5,000 have a form of disability. Furthermore, many US-based resettlement agencies currently experience strain providing the specialized care required by many of these resettled Syrian refugees with disabilities (RSRD) in large part due to austerity measures imposed by the US Federal government. Purpose/Objectives: This study explored food traceability systems in school foodservice in the United States and the potential benefits and challenges to their implementation.
Methods: An online questionnaire was developed and used to collect data. A mixed-mode approach was followed to recruit the participants. A convenience sample of 500 school nutrition professionals from Qualtrics panel was targeted for data collection with the goal of having responses from 300 participants. Academics are increasingly interested in getting out of their classrooms and labs to contribute their knowledge, expertise, and resources to help communities develop evidence-based policies. In addition to post-election initiatives such as the March for Science and 314 Action, many academics are joining “without borders”-type programs and organizations that connect academics with opportunities to volunteer their time and talents for “social good.”
