Within recent years, there has been increased attention to the growing physician shortage across the United States. This shortage has placed substantial strain upon regions of lower healthcare access, particularly those of rural regions such as much of the state of Mississippi. As rural healthcare providers are placed under more strenuous conditions, they encounter issues of increased patient volume, lack of a trauma team, or adequate transportation to higher-level care facilities. The purpose of this study is to evaluate the effectiveness of Cooking Matters classes in producing improvement in individuals’ cooking skills and confidence, as well as their eating behaviors, shopping skills, and perceptions of cooking in rural Charleston, MS. These classes have reported great success in more urban areas such as Atlanta, GA; Philadelphia, PA; and Washington, DC; however, different challenges may be faced in rural Mississippi. Mississippi is one of the leading states in both teen pregnancies and sexually transmitted infection rates. In an effort to limit these rates, Mississippi passed House Bill 999 in 2011. This bill mandated sexual education in public schools throughout the state. However, since the passage of the bill there have been many factors that impact the way this curriculum is taught. To better understand these factors, how they affect educators, and how schools are addressing them, this study surveyed educators who taught some form of sex-related education curriculum from 2011 to 2016. Cigarette smoking has long been recognized as a negative health behavior. Numerous studies have linked cigarette smoking to cancer, heart and circulatory problems, lung disease, and an array of other health issues, leading to lower quality of life and premature death. There is a wealth of knowledge relating to the negative outcomes of smoking behavior (USDHHS, 2010) and the factors leading to smoking behavior among adolescents (USDHHS, 2012).
