In Monterey County, the rate of childhood obesity is too high among the Latino/Hispanic community. The Head Start program in Monterey County serves more than 1,245 children each year with the majority of them being Latino/Hispanic. The causes of childhood obesity are a lack of physical activities, cultural beliefs, and financial issues among families. It leads to serious health problems that impact children academically and psychologically. This capstone project is to increase knowledge and awareness on how to live a Healthy Lifestyle among Head Start parents so that they can apply that to their lives and their children. The project …

A diet high in fruit and vegetables is associated with the prevention of many chronic diseases; however, only one in ten Canadian students in grades 6 to 12 consume the recommended daily intake of fruits and vegetables. Using smartphones to deliver nutrition interventions is an emerging area of research, although to-date these interventions typically limit their focus to weight loss. The overarching purpose of this research is to redevelop and evaluate an existing smartphone application for an adolescent population. Background: The development of a highly obesogenic culture promoting sedentary behavior and the consumption of calorie-dense foods has led to increased levels of overweight and obesity globally. While children and adults are both at increased risk of developing obesity, the risk is even higher in minority and low socioeconomic populations. Changes in familial structure and an increase in mothers of younger children (below the age of 6) entering the workforce have created a new demand for child care services. Over 2 million adult men in the United States have been diagnosed with prostate cancer, with nearly 200,000 new diagnoses each year. This type of cancer is the leading cause of mortality in U.S. men. One possible risk factor for prostate cancer is a high level of iron in the body, but the association has yet to be confirmed. This study was an investigation of the relationship between serum iron concentration and prostate cancer using data obtained from the 2009-2012 National Health and Nutrition Examination Surveys. This quantitative study involved 1,850 men in the U.S. aged 51 to 70 years. …

Wellness Wednesday is a interdisciplinary health education program for residents of the Akron Metropolitan Housing Authority (AMHA) funded by the Area Health Education Center. The program aims to provide knowledge and resources to support healthy lifestyles within an underserved population. An original nutrition education curriculum has been developed as part of this program. Group activities, cooking demonstrations, and education materials have been integrated into the curriculum. The topics for discussion were determined by the residents; therefor presentations were catered to specific concerns of the population.
