The goal of this study is to investigate the effects of wild blueberry fractions (Anthocyanins and Phenolic acids) on vascular function and physiology. More specifically the potential effects of the above fractions and their combination in physiological concentrations on endothelial cell migration, angiogenesis, gene expression and proteins synthesis of markers related to the above processes. Diet is strongly associated with many risk factors for chronic disease. Educational programs such as the Expanded Food and Nutrition Education Program (EFNEP) are designed to improve dietary behaviors among low-income populations. Although EFNEP has seen improvements, they are not yet up to recommendations. Previous studies have been successful in eliciting behavior change when improving self-regulation in conjunction with dietary education. Ingestion of berries containing polyphenols is associated with lower risk of inflammatory, metabolic, cardiovascular and degenerative diseases. Diet has been shown to modulate the activation of the complement system, a set of over 50 proteins present in the circulation and tissues that reacts in response to damage or microbial encounter and is critical for the maintenance of homeostasis. Imbalanced activation is tightly correlated with inflammation and various pathologies. Little research has been conducted on the knowledge and attitudes of nutrition in physical therapists and has only included small sample sizes. The purpose of this study was to test the hypothesis that muscular fitness is preserved in older adults who consumed pork daily as a part of the DASH dietary pattern. A controlled feeding pilot study was used to test this. Eight healthy older men and women were randomly assigned to consume either 3 ounces or 6 ounces of pork daily as a part of the DASH diet for a total of 12 weeks. Indicators of muscle mass, strength, and function were assessed at five time points (weeks 0, 3, 6, 9, 12) throughout the 12 weeks. A seven day cyclical …
