Background: Dietary nitrate has a controversial role in human health. For over half a century, the nitrate content of the three major dietary sources – vegetables, meat, and water – has been legislated, regulated, and monitored due to public health concerns over cancer risk. In contrast, a growing and compelling body of evidence indicates that dietary nitrate, particularly from vegetables, protects against cardiovascular disease and other chronic diseases. This evidence for the protective effect of nitrate is overshadowed by the potential for nitrate to form carcinogenic N-nitrosamines. Effective diabetes prevention and management relies on nutritional behaviors, thus a basic level of health knowledge is important for patients with diabetes and their caregivers in their quest to acquire acute glycemic control and minimize negative health outcomes (Ley et al., 2014). The purpose of this study was to assess the nutrition-related health knowledge of patients living with diabetes who are seen at the UNMC Sharing Clinic by use of a verbal questionnaire. Although proven that nutrition can impact physical health, limited research examines the relationship between nutrition-related lifestyle behaviors, nutrition knowledge, and the prevalence of injury in university music students. The objective of this study is to evaluate nutrition-related lifestyle behaviors and self-perceived nutrition knowledge of university music students before and after a targeted nutrition education session. An Examination Of The Impact Of The Covid-19 Health Threat, Stress, And Social Isolation On Lifestyle Habits As Analyzed Through The Protection Motivation Theory, Luciana Adib Soares

The COVID-19 emerged in China in 2019 and quickly spread to other countries, leading to mandated lockdowns and social isolation. This cross-sectional study examined the impact of the COVID-19-generated stress, health threat, and social isolation on dietary, physical activity, and self-care habits of adults in Florida, utilizing the PMT as a framework. Participants (n = 478) completed online surveys about demographics, perceived stress, and changes in lifestyle habits. Significant positive changes were reported in cooking at home (p < .001) frequency, sweets (p < .001), and breakfast (p = .009) consumption, outdoors physical activity (p = .005), self-care (p < .001), relaxation (p < .001), and rest (p < .001) habits. Significant negative changes were reported in fast food (p = .004) and snack (p < .001) consumption. A significant relationship existed between self-reported stress, perceived threat, (r = .33, p < .001), and perceived efficacy, (r = -.15, p = .002). Acid whey, a byproduct of Greek yogurt production, has little commercial value due to its low protein content and is also environmentally harmful when disposed of as waste. However, as a product of microbial fermentation, acid whey could be a rich source of beneficial metabolites associated with fermented foods. This study increases understanding of acid whey composition by providing a complete metabolomic profile of acid whey. Commercial and lab-made Greek yogurts, prepared with three different bacterial culture combinations, were evaluated. Samples of unfermented yogurt mix and cultured whey from each batch were analyzed. This research project aims to investigate the relationship between plant-based dieting and overall health, specifically the prevention and reversal of chronic disease. Two subjects committed to eating a plant-based diet comprised of primarily vegetables, fruits, whole grains and non-processed foods for six weeks. Before beginning, they were asked about their current health status, including a complete health history, and their knowledge of plant-based eating. Throughout the research period, the subjects shared what they were eating, challenges they faced, and any benefits they noticed. Background: Type 2 diabetes (T2D) is a worldwide epidemic and a leading cause of death in Mexico, with a prevalence of 15.9%, and >70% of diagnosed adults have poor glycemic control [glycated hemoglobin (HbA1c) >7.5%]. We developed a diabetes self-management education program contextualized to the study population, including dietary preferences, health literacy, and health system.

Relationship Satisfaction & Diet: Exploring The Mechanisms Through Which Intimate Relationships Influence Physical Health, Lindsey Robinson, Dylan Hillock, Dr. Josh Novak

Southeastern Council on Family Relations Conference

Understanding how intimate relationships influence physical health has been an important topic of focus; however, research remains unclear on the mechanisms through which this influence occurs. The purpose of this study was to examine how relationship satisfaction relates to diet quality, through mental health (depression and anxiety) and diet self-efficacy. Using a dyadic mediation model with a sample of 234 heterosexual couples, researchers found that women's higher relationship satisfaction was associated with better diet through lower depression and higher diet self-efficacy. Results revealed the same association between women's relationship satisfaction and diet through lower anxiety. Interestingly, rather than mediation through …

The psychosocial impact of bariatric surgery has not been studied as diligently as the physical impact, particularly within the first 6 months following surgery. The aim of the present study was to explore psychosocial adjustment in UK bariatric candidates within this time-scale. Research has shown that hypertension can be identified as early as adolescence, and preventative measures can be instilled in this age. International students studying at universities in the United States are subject to experiencing dietary acculturation while adapting to American food and culture. Such changes in eating patterns and behaviors are difficult to prevent and can negatively affect weight and health status.
