Previous research suggests that food insecurity is higher among college students and individuals from minority populations than the general population. Many college campuses have recognized this issue and developed on-campus food pantries to mitigate food insecurity among students. Nevertheless, barriers exist that prevent students from utilizing on-campus pantries. The purpose of this study was to investigate college students’ relationship to food and food access at Western Michigan University (WMU). Carbohydrate counting (CHO) is a nutrition education tool used by patients with type 1 diabetes mellitus (T1DM). The primary objective was to assess glycated hemoglobin (A1C) in participants with T1DM using CHO counting vs. those using a structured meal plan (SMP). The secondary objectives were to determine if BMI-for-age, parental income, parental involvement, and mothers’ educational level were associated with their children’s glycemic control. A cross sectional study was conducted, where participants aged 4-18 years, or their parents completed a survey. Background: College students experience food insecurity at a rate 3.5 times higher than the U.S. general population, affecting 43% of students. Furthermore, college students consume high amounts of ultra-processed products. NOVA, a food classification system, takes into account food processing and is thought to better fit the modern food environment.

Purpose: The purpose of this research project was to examine the impact of CalFresh enrollment on food security status. This study also evaluated the impact of two different nutrition education interventions (MyPlate and MyPlate+NOVA) on participants’ dietary habits and nutrition knowledge.

OBJECTIVE: The objective of this paper is to investigate the effectiveness of diabetes education provided by registered dietitians (RD) in a diabetes case management (DCMs) model, compared to diabetes education provided by RDs in the usual care model (UCM) at an outpatient endocrinology clinic in Omaha, Nebraska. This study hypothesizes that education by RD DCMs will be equal or more efficacious in regards to primary outcomes of A1C and BMI and secondarily, lipid results and adherence (total encounters) when compared to outcomes of UC.

Olfactory impairment is a prevalent but underreported condition among older adults in the United States (U.S.). In the elderly, this impairment is associated with a host of adverse health conditions and issues that affect the quality of life. Background: Previously, beetroot and tart cherry supplementations have been investigated for their effects on exercise performance and recovery separately. Beetroot containing nitrate has been used to improve blood flow to enhance exercise tolerance. Tart cherry extract containing anthocyanins has been shown to lower inflammation and improve recovery time in exercise performance.

focuses on a low-glycemic index diet rather than the traditional carbohydrate consistent diet to control blood glucose levels. Poor dietary behavior can lead to various chronic health conditions, such as heart disease and obesity. Because dietary intake takes time to impact health, observing diet knowledge in college students can be beneficial. This study sought to measure whether greater nutritional knowledge would translate to a healthier dietary intake. Nutritional knowledge and behavior were measured and then compared in 257 students in two different undergraduate classes - an introductory nutrition course and a standard biology course - which was the control group. The diet quality was analyzed for people living in New Zealand and people living in other Westernized Countries (United States, Canada, Western Europe) based on the dietary guidelines. Diet quality was analyzed by looking at consumption of food groups such as fruits, vegetables, meat, and seafood as well as nutrients such as saturated/trans/unsaturated fat, sodium, and added sugars. As individuals enter adulthood, their lifestyles and lifestyle behaviors begin to change drastically. These lifestyle behavior changes in emerging adulthood provide a foundation for future health behaviors that often persist through all of adulthood. The aim of this study was to use Latent profile analyses (LPA) to discover distinct profiles of homogenous groups of young adults based on alcohol, diet, and exercise behaviors. Overall, five distinct profiles for both males and females were identified: Moderates, Unhealthy Eaters, Medium Drinkers, Healthier Eaters and Exercisers, and Heavy Drinkers. Concentrated milk was provided by the South Dakota State University and starter culture for this study was prepared and donated by Vivolac Cultures Corporation, Greenfield, Indiana.

The project initiated as a continuation of a previous study on effects of protein concentration, coagulum cut size and set temperature on curd moisture loss kinetics while stirring during cheesemaking. Current practices support the use of probiotic and prebiotic supplementation to improve chronic gastrointestinal distress (GID). The aim of this study was to determine the tolerance and benefits of GlutenShield (GS), a prebiotic, probiotic, and enzyme supplement, on adults with GID. Subjects (n=20) took either GS or the placebo for 30 days and completed a pre-treatment FFQ as well as a pre- and post-treatment GID questionnaire, blood draw, and stool sample. Participants consumed more total and saturated fat, and less fiber and whole grains compared to the recommended intake. A significant reduction in IgG2 was observed in the GS group …

This article reviews the rate of body dissatisfaction and weight bias among young children. It was initially hypothesized that body-image begins much earlier than adolescence, where most interventions take place. Out of fifty articles read on the subject, forty-five peer reviewed articles were included in this review. The findings of these articles were synthesized for a comprehensive review on the topic. Results suggested that weight bias begins around three years of age, while body dissatisfaction begins around age five for girls, and seven for boys. This paper utilizes survey responses from local coordinators of LCF, an international micronutrient supplementation humanitarian organization, to provide insight into the challenges and personal rewards of providing nutrition education to parents of malnourished children. LCF is based in Utah and operates in 19 countries throughout the world. LCF recently introduced a series of health lessons geared toward parents of malnourished children. Kentucky Proud (PIUKP) project is a recipe-development project that aims to boost produce consumption by incorporating local fruits and vegetables. The purpose of this study was to implement promotional strategies using PIUKP recipes at farmers’ markets and determine their effects on consumers’ intent of purchasing and preparing the produce. Background: The Nutrition Facts panel as it is recognized today was developed by Dr. David Kessler in 1994 during his tenure as the commissioner of the FDA. A new label was announced on May 20, 2016 to increase awareness about food content, clarify the amount of food in a package, and to present information that has been recently and scientifically updated. Several studies have researched the food label and the association between knowledge and dietary intake.
