This literature review examines the impact of various mindfulness-based interventions (MBIs) on the obesity-related eating behaviors of stress eating, emotional eating, and binge eating. With the inconsistency of the weight loss industry to provide long-term weight loss results, the United States is in need of alternative methods of weight loss and weight maintenance to combat the current overweight and obesity epidemic. MBIs are thought to be beneficial when targeted at behaviors of weight gain because mindfulness promotes an individual’s awareness of present physical and emotional sensations within the body, including hunger and satiety cues. Carotenoids are pigments found throughout nature in a large variety of plants including fruits and vegetables (F/V). Carotenoids provide much of the color we see in nature but are perhaps most noticeable in plants with yellow, orange, or red flesh. Carotenoids are antioxidants that serve as a protection against harmful ultraviolet radiation and other free radical producing processes in the body and in plant tissues. Once consumed, carotenoids are deposited in the skin, particularly in fatty tissue. Raman resonance spectroscopy (RRS) can be used to quantify skin carotenoid levels and has been proven a good indicator of F/V consumption. A …

Obesity significantly contributes to human illness and to subsequent rising healthcare expenditures. Bariatric surgery has been identified as the only effective option to achieve the weight loss necessary for those who are morbidly obese. Previous research indicated that maintaining significant weight loss has been a problem for individuals who undergo bariatric surgery. The number of bariatric surgeries is increasing and factors that contribute to or interfere following bariatric-surgery weight-loss maintenance need to be determined. This is likely due to increased use of tobacco and exposure to environmental risk factors. Background: Postoperative ileus (POI) is the period of intestinal paralysis following any surgical procedure. POI is manifested by nausea, vomiting, abdominal distention, delayed tolerance of oral diet and delayed time to flatus and stool. Little is known about POI following coronary artery bypass grafting (CABG) as no other study has focused specifically on the incidence of POI following CABG.

The purpose of this quantitative study was to examine the attitudes and perceptions of registered dietitians with bachelor’s degrees (BS, RD’s) regarding a transition to the MS degree as the requirement for the RD certification. Child obesity is affecting children’s health nationwide. Rates are highest among African Americans (AA) in the South. Research has explored parents’ influence on child eating and activity, but most has reported on mothers’ influences. The purpose of this research was to investigate perceptions about AA fathers’ influences on their children’s eating and physical activity. Infertility is one of the major problems of obesity. Studies have shown that administration of leptin reversed obesity-induced infertility in rats and mice. Coenzyme Q10 (CoQ10) is an antioxidant and also supplies the energy needed for ovulation and embryo development. We hypothesized that leptin when combined with CoQ10 could greatly improve obesity-induced infertility. The results showed a significant decrease in food intake, body weight, and the regular estrous cycle was restored after treatment with leptin+CoQ10. Results have found that watching television while eating or being provided larger portions increases intake. Traditional students enroll in post-secondary institutions during emerging adulthood. College enrollment is increasing and adult weight gain occurs most rapidly during the college-age years, with poor food decisions as a potential contributing factor. The present study examined the awareness, perception, and self-reported purchasing behaviors of college students regarding four front-of-package (FOP) nutrition labeling systems and symbols. Students were sent a 24-question web-based survey, with 908 completed surveys that met the research criteria. There were 888 (98.3%) respondents who recognized at least one of the four presented FOP nutrition labels. There were no significant differences between the groups that recognized one …

BACKGROUND: Gestational Diabetes Mellitus (GDM) is defined by glucose intolerance detected with the onset of pregnancy, and if gone undetected and untreated, can lead to morbidities for the mother and baby. Elderberry (Sambucus sp.) fruit is a healthful food with a variety of reported curative properties and is among the richest sources of anthocyanic pigmentation, which are the primary factors for its commercial use. Although a variety of value-added elderberry products are available to consumers, it is questionable as to which product form contains the highest nutrient levels and color stability characteristics, and represents the best value to consumers. Abstract
Intervention(s): Data was collected using an online Qualtrics survey with a number of questions on demographics, sports participation, disordered eating and body dissatisfaction.
Main Outcome Measure(s): Means, standard deviations, and frequencies for all demographic information. Independent t-tests were conducted to compare: differences in disordered eating and body dissatisfaction between higher and lower performers.
Results: Higher performing athletes were not at greater risk of disordered eating or eating disorders (P>.05). No significant difference was found between higher and lower performers on EDE-Q average score, BSQ average score, or EDE-Q subscales. There was no difference found among cross-country …

Objective: To determine if collegiate athletic trainers meet the current national recommendations for a healthy weight, diet and physical activity.
Design: The research was a cross-sectional design consisting of a self-constructed survey formulated using the 2010 Dietary Guidelines and 2009 Academy of Sports Medicine Physical Activity Recommendations.
Subjects: One- thousand randomly selected athletic trainers were contacted to participate. One-hundred and five participants (10.5% return rate) completed the survey. All were District 3 members of the National Athletic Trainers Association.

Introduction: Treatments of retinoic acid, a metabolite of vitamin A (VA) are shown to induce hyperlipidemia in humans and animals, which may influence adiposity. To understand the role of VA in weight management, two studies, one in animals examining effects of VA combined with high-fat diet (HFD) on body mass (BM) gain and the second in humans comparing dietary VA between participants who were overweight/obese and who had and had not lost 10% of body weight by consuming a hypocaloric, low-fat diet, were conducted.

Public health professionals in the United States are implementing various interventions in effort to improve dietary intake in low-income individuals. One intervention strategy that has gained attention over the past several years is providing financial incentives for federal nutrition assistance users when they purchase fruit and vegetables at local farmers' markets. Physically active females, or female athletes, are at risk for the condition known as the female athlete triad (Triad). The Triad is made up of three components that are distinctly separate, but intertwined: consuming inadequate energy for how much they are exercising, poor bone health, and problems with their menstrual periods. Evidence suggests that college students may increase caffeine consumption to cope with the stress and demands of college. The relationships between perceived stress, caffeine consumption, and GPA were examined in students at a large public university. Students were surveyed to determine perceived stress (Cohen’s Perceived Stress Questionnaire), beliefs about caffeine, caffeine consumption, workload in and outside of the classroom, and GPA. Surveys were administered at the beginning of the semester and again at midterm. Based on Cohen’s 40-point scale, average stress scores increased from 15.95 ± 6.34 at the beginning of the semester to 18.89 ± 6.94 at midterms. Additionally, …

Athletic trainers (ATs), nutritionists/RDs, strength and conditioning specialists (SCSs), and other athletic department personnel may be available to student-athletes and can be solicited for nutrition advice. Multiple studies have found that although some universities have a sports nutritionist on staff, student-athletes approached an AT most often for nutrition advice rather than an SCS, nutritionist or other person. Over the past decade, mobile technology has been developed in the hopes of improving health outcomes, especially related to weight loss. The purpose of this study was to evaluate the effectiveness of a smartphone application as a supplementary weight loss tool among highly motivated individuals. Twenty-five individuals over the age of 18 were included in the study based on BMI and participation in a Midwest weight-loss clinic. Cardiovascular disease is the leading cause of death in the United States, and conventional treatment often emphasizes pharmaceutical approaches. Research has recently started exploring non-pharmaceutical approaches, including nutritional interventions. This research study was conducted to test the effectiveness of a novel nutritional approach, curcumin, on the improvement of cardiovascular health in young, obese males (BMI≥30 kg/m2). This study included 22 men, matched based on BMI and randomly assigned to the intervention (n=11) or placebo group (n=11). The purpose of this study was to determine if the amount and variety of fruit and vegetable intake increased among community-dwelling older adults participating in Kentucky’s congregate meal site program following a series of educational nutrition lessons. A convenience sample (n=35) of community-dwelling older adults at two intervention (n=19) and two control (n=16) senior centers in central Kentucky participated in this quasi-experimental pre-post pilot study. Following the intervention there was a trend towards increased self-reported intake in the variety of fruit and vegetables among the intervention group (range:0.03±3.31 to 1.32±2.75 servings per week); a significant increase in the number of …

Hispanics are more affected by diabetes than non-Hispanic whites and they tend to experience more severe complications. Research shows that although self-management is poor among ethnic minorities, it is even more so among Hispanics. The “Taking Ownership of Your Diabetes” (TOYD) program has been shown to be successful in helping individuals manage their diabetes. However, no work has been conducted with Hispanic audiences in Kentucky. TOYD program allows individuals to modify lifestyle risks and solve problems related to diabetes management.
