There is a shortage of educationally qualified dietetic technician personnel in the health care industry. The job opportunities for dietetic technicians exceed the supply. Because of this shortage and the need to deliver high quality nutritional care to individuals and groups, dietitians should function at the highest level of professional competency. To accomplish this goal requires delegating certain routine task functions to the dietetic technician.

The effect of increasing the dietary protein and pyridoxine level on calcium balance and bone strength was studied in growing and adult rats. The loss of calcium due to urinary excretion of o-phosphoryl-ethanolamine on a high protein diet was also examined.

Three studies were conducted. In the first adult male rats were fed 40% protein diets with high or low pyridoxine or a low protein, low pyridoxine diet. Calcium balance and femur bending stress were determined. In the second study male weanling rats were given either 10 or 63% protein with 0.40 or 0.73% pyridoxine. The effective use of professional dietitians is predicated on the effective delegation of less demanding responsibilities and routine tasks to educationally qualified dietetic technicians. This is essential to effect optimal nutrition care at lowest cost.

The purpose of this research was to determine the degree to which dietetic technicians were performing identified tasks of the role as defined by the American Dietetic Association. A questionnaire was the survey instrument used to collect data from the 130 dietetic technicians who were members of the American Dietetic Association.

Phytate Extraction And Stimulation Of Phytase By Zn & Mg In Seeds, Sandra Gin-San Chow

Almonds, peanuts, mung beans and soy beans were soaked in distilled water for 0, 2, 6, 18 and 24 hours, and the phytate in the seeds and in the soak water was quantitatively analyzed. A comparison of phytate content was made after the seeds were soaked in 0.01 N HCl or in saturated NaHco 3. The seeds soaked in distilled water served as controls. The effects of zinc and magnesium on stimulation of phytase in seeds were determined by comparing the quantity of substrate (phytate) with that of the control group.
