Cancer survivors face long-term effects from cancer treatments, with cognitive dysfunction being an important, yet understudied, consequence of cancer treatment. Inflammation is a proposed mechanism for impaired cognition status. As research demonstrates diet is associated with both pro- and anti-inflammatory effects, diet may represent a novel strategy to mitigate cognitive decline in cancer survivors. The purpose of this study was to 1) quantify the impact of an educational cooking class on inflammatory potential of diet (measured by the Dietary Inflammatory Index (DII)) in cancer survivors and 2) determine the relationship between dietary changes and cognitive function in cancer survivors. OBJECTIVE: The objective of this paper is to investigate the effectiveness of diabetes education provided by registered dietitians (RD) in a diabetes case management (DCMs) model, compared to diabetes education provided by RDs in the usual care model (UCM) at an outpatient endocrinology clinic in Omaha, Nebraska. This study hypothesizes that education by RD DCMs will be equal or more efficacious in regards to primary outcomes of A1C and BMI and secondarily, lipid results and adherence (total encounters) when compared to outcomes of UC.

Lutein + zeaxanthin are carotenoids most recognized in eye health, but less is known about their status and transfer during pregnancy. While quantified in maternal and umbilical cord blood, they have never been analyzed in placenta tissue. Therefore, the purpose of this dissertation is to firstly quantify lutein + zeaxanthin concentrations in human placenta and to later correlate with levels in maternal dietary intake, maternal serum, and umbilical cord blood. Proportions of lutein + zeaxanthin will also be compared within diet, placenta, maternal serum, and umbilical cord blood among additionally analyzed carotenoids including lycopene, β-cryptoxanthin, α-carotene, and β-carotene. Assessing food intake is important to estimate nutrient intake and counsel patients regarding their diet patterns and supplement use. The purpose of this study was to revise a validated Block Calcium/Vitamin D Screener to include protein for use in elderly patients with a history of fragility fracture. The Block Calcium/Vitamin D Screener food list was refined by adding protein foods and culling the calcium and vitamin D food items based on 2003-2006 NHANES survey. Background: Nutrition is an important aspect of critically ill hospitalized patient care but the lack of consistent nutritional guidelines for sub-critically ill patients with Chronic Obstructive Pulmonary Disease (COPD) requiring non-invasive positive pressure ventilation (NPPV) may be putting vulnerable patients at risk. Hand grip strength measurements are an emerging metric for nutritional status.

Objective: The objective of this study is to determine if hospitalized patients with COPD on NPPV show a difference in handgrip strength as a marker of nutritional status than those hospitalized patients with COPD not requiring NPPV.

BACKGROUND: Bone health is a serious concern for long-term survivors of Allo-HSCT due to multiple risk factors including steroids, chemotherapy, immunosuppressive drugs, and poor nutrition status1. Steroids have been long proven to have negative impact on bone health and the National Osteoporosis Foundation (NOF) lists steroids as a contributing factor to osteoporosis and fractures. NOF guidelines recommend providing adequate daily vitamin D as a safe and inexpensive way to help reduce fracture risk1. Therefore, proper supplementation of vitamin D may increase the quality of life for patients post Allo-HSCT.

Background: Postoperative ileus (POI) is the period of intestinal paralysis following any surgical procedure. POI is manifested by nausea, vomiting, abdominal distention, delayed tolerance of oral diet and delayed time to flatus and stool. Little is known about POI following coronary artery bypass grafting (CABG) as no other study has focused specifically on the incidence of POI following CABG.

This is likely due to increased use of tobacco and exposure to environmental risk factors. BACKGROUND: Gestational Diabetes Mellitus (GDM) is defined by glucose intolerance detected with the onset of pregnancy, and if gone undetected and untreated, can lead to morbidities for the mother and baby. Implementation of nutrition counseling can work to reduce the risk of complications through dietary modification promoted and adopted during pregnancy. Follow-up is important, as individual assessment is used to modify recommendations.
