While it would not be accurate to suggest that Ireland is a hub of veganism or vegetarianism, too often it is written off as inherently unsympathetic to the ethics of plant-based eating and anti-speciesist politics. While it is true that Irish culture is historically tied to speciesism and its economy is especially dependent upon “meat” and dairy production, Ireland’s relationship with other animals is complex and sometimes forgiving. Companion animal owners are increasingly concerned about the links between degenerative health conditions, farm animal welfare problems, environmental degradation, fertilizers and herbicides, climate change, and causative factors; such as animal farming and the consumption of animal products. Accordingly, many owners are increasingly interested in vegetarian diets for themselves and their companion animals. However, are vegetarian canine and feline diets nutritious and safe? Four studies assessing the nutritional soundness of these diets were reviewed, and manufacturer responses to the most recent studies are provided. iven the violence, objectification, domination, commodification, and oppression inherent in industrialized food production, some conscientious consumers have adopted vegan practices. This chapter discusses two conceptions of veganism, lifestyle/identity veganism, VI, and veganism as a goal/aspiration, VA. It argues that due to conceptual and practical flaws with VI, conscientious consumers should adopt VA. It considers and rejects the so-called compassionate carnivore movement. It then explores arguments denying the casual efficacy of adopting any form of veganism. It concludes that VA can make a difference, and those in consumer cultures are obligated to adopt and practice it.

This article discusses a dairy advertising campaign featuring skeptic Derren Brown. I explore the various health claims made in the ads as well as a report Brown featured on his website that claimed consumption of cow’s milk is linked to longevity. I discuss how dairy consumption is largely linked to race and ethnicity. It is a practice enjoyed primarily by European whites as most nonwhites are lactose intolerant. Lactose intolerance is a normal biological process associated with weaning, but it is medicalized and made deviant because it is not part of the white experience. I also mention comments made by …

Employing a qualitative method adapted from phenomenological psychology, the paper presents a socio-psychological portrait of a vegetarian. Descriptives are a product of the author’s reflection on (dialogue with) empirical findings and published personal accounts, interviews, and case studies. The paper provides evidence for the hypothesis that vegetarianism is a way of being. This way of experiencing and living in the world is associated with particular forms of relationship to self, to other animals and nature, and to other people. Conflicts of interest permeate the governance of the federal advisory committees that issue recommendations to consumer protection agencies, such as the Food and Drug Administration (FDA) and the United States Department of Agriculture (USDA), and, therefore, American consumers need a federal solution to protect their health from biased recommendations. The effect of serving-size on consumption is well-established: the larger the serve, the greater the amount consumed. But what is the size of the effect, what are the processes driving the effect, and what are the conditions that facilitate vs. inhibit the effect? The present research uses a meta-analysis of 67 studies to quantify the effect of serving-size on amount consumed and to test two competing explanations of why the effect occurs. One view is that the serving-size is mediated by a perceptual effect, the other that it is mediated by a consumption norm. The meta analysis demonstrates that when …

The effect of reducing the phytate in soy-protein isolates on nonheme-iron absorption was examined in 32 human subjects. Iron absorption was measured by using an extrinsic radioiron label in liquid-formula meals containing hydrolyzed corn starch, corn oil, and either egg white or one of a series ofsoy-protein isolates with different phytate contents. Iron absorption increased four- to fivefold when phytic acid was reduced from its native amount of 49-8.4 to < 0.01 mg/g of isolate. Even relatively small quantities of residual phytate were strongly inhibitory and phytic acid had to be reduced to < 0.3 mg/g of isolate (corresponding to < 10 mg phytic acid/meal) before a meaningful increase in iron absorption was observed. However, even after removal ofvirtually all the phytic acid, iron absorption from the soy-protein meal was still only half that of the egg white control. It is concluded that phytic acid is a major inhibitory factor of iron absorption in soy-protein isolates but that other factors contribute to the poor bioavailability of iron from these products.

An evaluation was made into the usefulness of ferrous fumarate as an iron fortificant for an experimental chocolate drink powder targetted to children and adolescents. Organoleptically ferrous fumarate was acceptable when the chocolate drink powder was reconstituted in milk or water that was heated to < 80". Unacceptable colour changes occurred, however, when boiling milk or water were used. In human Fe absorption studies when the Fe compounds were added to the chocolate drink immediately before consumption, ferrous fumarate was 3.31 % absorbed compared with 2.82% for ferrous sulphate and 2.11 % for ferric pyrophosphate. When the Fe compounds were processed during the manufacture of the chocolate drink powder, the absorption of ferrous fumarate was 5.27 %, ferrous sulphate 2.62 'YO and ferric pyrophosphate 0.55 %. Ascorbic acid had little or no effect on the absorption of ferrous fumarate. It is concluded that food processing can influence the relative absorption of fortification Fe and that, if not reconstituted with boiling milk or water, ferrous fumarate could be a useful compound for the fortification of chocolate drink powders.
