Globally, poultry is one of the most versatile and cost-effective sources of animal-based protein. Due to its wide variety of uses and variability of growing styles, poultry production is applicable in nearly every country. Necrotic enteritis (NE), caused by C. perfringens and coccidiosis, is responsible for substantial economic loss annually. In the first chapter, we investigated the effect of secondary bile acid on necrotic enteritis. Day-old broiler chicks were randomly assigned to 5 groups of diets supplemented with 0 (basal diet), 0.8, 1.0, and 1.5 g/kg (on top of basal diet) deoxycholic acid (DCA). The birds were challenged with Eimeria maxima (20,000 oocysts/bird) at d 18 and C. perfringens (109CFU/bird/day) at d 23 and d 24 to induce NE. According to USDA FAS, in 2017, the US was the largest broiler-producing country with 18.696 million metric tons and the second largest exporter of broiler products with 3.075 million metric tons (Brazil is the largest exporter with 3.847 million metric tons). Thus, around 83% of US production is consumed domestically. According to USITC, chickens are the most important protein source in the US, and Americans consume more chicken per capita than any other country. However, while the broiler industry is a key segment of US agriculture, it is underserved by large-scale supply-chain and trade models.

Currently, several niche markets, such as organic and “all natural”, are marketed within the poultry industry. However, little research has been undertaken to determine the cost-effectiveness of poultry diets used to produce chicken within these markets. Specifically, the economics and resulting profits associated with raising chicken with antibiotic-free, all-vegetable (AV) diets are not evaluated. As national chain restaurants such as Chick-fil-A and Panera Bread begin to mandate poultry suppliers raise chicken without antibiotics and use AV diets, it becomes increasingly important to evaluate the economics for integrators. Two 3-week experiments were conducted, each using 480 day-old male broilers placed randomly among 96 battery cages (5 per cage; 680cm2 per bird), to evaluate the influence of phytase supplementation, with or without supplemental xylanase, on bird performance. Individual body weights and cage feed weights were taken on days 0, 7, 14, and 21, and mean BW, body weight gain (BWG), feed intake (FI), and FCR over each period calculated. Mortality was recorded daily and used to calculate livability and adjust FCR in both trials. In trial 2, excreta was collected by cage from 14 to 21 days for bone …
