Food is a part of people’s lives, even when it is not acknowledged. It is distinctly tied to various cultures, ethnicities, and religions; with elements of restriction and gluttony abundant. Then, there is the complication of modern nutrition and health education that is taught in American, and more specifically in Californian schools. Bullying prevention is often absent from elementary school curriculum. Many young elementary students may not know how to recognize and address bullying when it occurs, potentially causing early harm to their social and emotional development and their academic performance throughout their primary school years. To address the lack of bullying prevention and education, I created a three-day lesson on bullying and bullying intervention which I intend on presenting to a class of fifth graders at Las Animas Elementary School in Gilroy, California.

Social Activism is a key aspect to educating and being educated. For this Capstone, the researcher discusses on the outcomes to implementing a social activism curriculum into an elementary classroom. The participants for the Capstone Project included fifth-grade students in a public elementary school located in a small agricultural city. In this capstone project, I argue for the importance of incorporating the teaching of morals and ethics within the classroom. I ground this argument in a critical analysis of William Ayers’ Teaching Toward Freedom and a curriculum that links Ayers’ thesis with Dr. Martin Luther King Jr.’s Birmingham Letter. The review of Teaching Toward Freedom is designed to elicit why this is a critical book for the field of teacher education. The issue with focusing on a black-and-white version of history impacts people of color from ethnic backgrounds that are not equally represented in the curriculum. Physical Education (P.E.) is at a risk of becoming obsolete at the elementary school level. This is an important problem that needs to be addressed because children need a daily physical outlet. But, it goes beyond just getting outside and moving. If journaling is integrated into the physical education curriculum, students can use this tool to reinforce what they are learning when they are exercising as well as communicate their feelings about physical education. This senior capstone examines the benefits of incorporating health and wellness education for 100 fifth graders from three different classrooms in a local Monterey County elementary school to gain their perspectives about the different aspects of health and wellness. Through the use of literature review, anonymous surveys with students and three fifth grader teachers, the result findings indicate that incorporating health and wellness education into fifth grade curriculum would benefit students to have a better health and wellness.
