The creation of web-based real-time computer simulations has given language educators incredible new opportunities to create immersive experiences for English as a Foreign Language (EFL) learners. This thesis reviewed 12 empirical studies, 3 previous literature reviews, 3 non-empirical journal articles, and 23 additional background sources investigating the impact of Immersive Virtual Environments (IVE) on EFL learners’ motivation and oral communication in EFL learning. 12 empirical studies were analyzed closely while other sources were used to provide additional information and theoretical insights. Cultural explanations of how familial resource inequality negatively impacts the academic well-being of a Latino/a child saturate the literature. This study examines the relationship between economic disadvantage and academic performance and school punishment through Family Stress Process Theory, providing a contextual analysis of resource instability. The additional myriad of legal and social constraints that parental nativity provides for family members can moderate this relationship. Research suggests that concept mapping has a positive effect on recognition, recall, and transfer. Likewise, researchers in cognitive psychology have shown the value of referencing oneself with a concept. Known as the self-reference effect, learners who connect their experiences or traits with new knowledge are more likely to remember that knowledge than if they used other mnemonic devices. The two articles presented in this thesis used a researcher-developed literature-based survey instrument to collect data on the Expanded Food and Nutrition Education Program (EFNEP) in the United States. Data was collected on methods of teaching, communication technologies used, recruitment strategies, barriers to attending classes, and program assistant demographic data. There were 803 program assistants working during the 2018-2019 program year. There were 346 program assistants who completed the 35-question survey instrument during data collection.
