Childhood obesity in American children has tripled in the last 20 years, and 85% of current healthcare spending is linked to diet-related diseases. The consumption of highly processed foods is linked to these trends and makes up more than half of an average American youths’ diet. Reducing the consumption of highly processed foods in children’s diets can be addressed, in part, by addressing childhood neophobia (willingness to try new foods) associated with whole foods like fruits and vegetables. Climate-appropriate agroforestry can provide low-input food security and ecosystem services for local Californian Mediterranean climates, while conserving natural resources (e.g., water, nitrogen, etc.). This project showcases a variety of agroforestry methods for five common plant communities of California and other analogous Mediterranean climates at the CAFES Experimental Farm on the campus of Cal Poly San Luis Obispo. Plant community species and their ethnobotanical uses were analyzed to mimic and incorporate aspects of native flora. Career and Technical Education (CTE) teachers have long been active in lobbying the federal and state governments in support of CTE through their professional organizations, but these are not traditionally considered interest groups. This study sought to determine if the formal relationships—dues agreements—between the two largest national professional organizations, and their state affiliates had an impact on state funding for CTE. The impacts of professional organization unity, membership rates, and lobbying expenses on state-level CTE funding were analyzed through the lens of interest group theory, a subfield of political science. Since the mid-19th century, agricultural museums and living history sites, first in Scandinavia and then in the United States and Canada, have provided historical, cultural, and, sometimes, scientific information about farming to visitors. Many of these visitors have been school children on field trips. Given the structural problems in education laid bare by the recent pandemic, we as a community of educators need to re-evaluate goals for secondary science education. Specifically, classrooms and course content must evolve to become more socially responsive, inclusive, and interdisciplinary. In the rapidly changing industry environment, continual review of agricultural curriculum needs provides relevant curriculum recommendations for academic programs. This thesis consists of two articles that examined an instructional treatment based on the use of Arduino UNO R3 programmable microcontrollers in a fundamentals of agriculture systems technology course at the University of Arkansas. The first article examined students’ breadboarding and programming self-efficacy and knowledge of Arduino. The treatment consisted of a three-class-period instructional treatment, starting with a pretest before instruction to measure students’ baseline interest, knowledge, and self-efficacy of breadboarding and programming Arduino. Pesticide drift and inadvertent contamination pose particular risks to organic production. Some organic producers have lost their crops, certification, and/or organic markets because of contamination events. Through this thesis research, I explain the perceptions and experiences that certified organic farmers in Montana have about drift and inadvertent pesticide contamination. I conducted semi-structured interviews with eleven certified organic farmers from various regions of Montana. The two articles presented in this thesis used a researcher-developed literature-based survey instrument to collect data on the Expanded Food and Nutrition Education Program (EFNEP) in the United States. Data was collected on methods of teaching, communication technologies used, recruitment strategies, barriers to attending classes, and program assistant demographic data. There were 803 program assistants working during the 2018-2019 program year. There were 346 program assistants who completed the 35-question survey instrument during data collection.

Higher education is changing, and more community colleges find themselves helping to increase the number of students who receive a bachelor’s credential from a 4-year post-secondary institution. This qualitative study was designed to determine the effectiveness of the online two plus two Agriscience Education program at a university in North Carolina. Twelve current and former students provided feedback about their perspectives and lived experiences through semi-structured interviews.

Soils in the Monongahela National Forest (MNF) are acidic due to sandstone parent material, acid deposition, uptake of base cations by vegetation, and release of organic acids by organic matter (OM) decomposition. Increases in soil acidity have caused declines in forest health and changed species composition and nutrient status. Liming can neutralize soil acidity, but no large-scale liming projects have been done on acid forest soils in the USA.
