Several years ago I witnessed a graduate student speaking to person on his laptop screen. I asked, “who are you talking to?” He said to his wife in Turkey. I asked what software are you using? He said Skype, and it is free. Thus began my entry into the world of Skype. At first chance I downloaded Skype onto my personal computer. Since that time I have used Skype as a communication and instructional tool for academic purposes. An institutional repository is an excellent vehicle for publicizing the quality of research conducted by the faculty, staff, and students, and for sharing unique institutional collections with a wide audience. Through the Scholars Archive, JWU scholarship and collections are able to gain more global visibility via the web. This has the potential to attract new students, researchers, faculty, and funding, as well as further increase Johnson and Wales’ reputation as an institution of higher education.

Student reflection in experiential education is recognized as a valuable tool in learning and development (Moon, 2006). InCoRe, an acronym for integration, coordination and reflection, is a model for reflective teaching and learning intended to encourage student reflection prior to, during, and after an internship experience. InCoRe operates through the strategic integration of experiential education within a program of study, the coordination of student advising between faculty and the administrators and staff members who manage and support experiential education and student-based reflection oriented toward fulfillment of student learning outcomes. I have attended and been involved in dozens of annual meetings and conferences across the United States over the past decade. My experiences at these events, I am certain, are likely to be very similar to those of most readers. At these conferences the basic format involves a large number of people coming together to presumably learn something new, to interact with colleagues, to network and meet new colleagues within the context of bringing what is learned back ones institution.

Techniques for infusing critical thinking instruction into content while teaching specific subjects have been discussed in the educational literature pertaining to critical thinking and instruction. The purpose of this study was to determine if infusing a brief critical thinking lesson related to course content into a culinary arts laboratory course which provides a setting for career oriented active learning would lead to gains in critical thinking ability.
The general structure of the methodology was adapted from work completed by Rose (1997). An experimental, pretest-posttest control group design was employed (Campbell & Stanley, 1963) to determine treatment effects on the variables …
