How Canning Preserves Foods

The high water content of most fresh foods makes them very perishable. Foods spoil or lose their quality for several reasons:

growth of undesirable microorganisms - bacteria,molds, and yeasts

activity of food enzymes

reactions with oxygen

moisture loss
