Food is a part of people’s lives, even when it is not acknowledged. It is distinctly tied to various cultures, ethnicities, and religions; with elements of restriction and gluttony abundant. Then, there is the complication of modern nutrition and health education that is taught in American, and more specifically in Californian schools. But, the education received on this issue has failed some students. This Capstone Project aimed to investigate the school-related challenges and benefits of having a K-6th grade child who participates in travel or club level sports during the school year as an elite athlete. There was little to no relevant research literature on this topic, but I was able to navigate and build off of other formative research surrounding the main idea; excessive absences related to sports and extracurricular activities, and truancy. Basic Needs Initiative at California State University, Monterey Bay is a department that provides students with food, housing, and wellness resources. Over half of the university's students experience food insecurity, and over 85% use non-academic resources to learn about nutrition. This project adds a dietary health section to the department’s website to increase students’ access to nutrition education. It addresses the micro-level agency problem that too few students eat a healthy, balanced diet. Unhealthy eating is a risk factor for food insecurity, so the project indirectly addresses the macro-level health problem that too many college students in California experience food …

The focus issue addressed in this Capstone Project is on improving the challenges faced by students with special needs through online modalities of adapted physical education (APE). This is an important issue for students with special needs because they are regressing because of online learning. The increase in obesity rates in America’s youth could be a reflection of undernourished school lunches, a decrease in physical activity, and the lack of knowledge of health and nutrition. Children who come from a low-income family are more likely to be affected by these circumstances. School gardening may be a way of replacing those impacts. This senior capstone research project examines the benefits of school gardening on low-income elementary school students when implementing as part of the curriculum in schools.

The increased use of technology has lead to a decrease in physical activity engagement by elementary aged children, and children are often unaware of how a sedentary lifestyle increases the risk of childhood diseases and illnesses, such as obesity and diabetes. There have been significant studies stating that physical activities have been eliminated for elementary school students. Today students are expected to attend school for approximately eight hours, five days out of the week. This senior capstone paper examines the many benefits of integrating physical activities into the elementary classroom through the use of literature review, anonymous-survey of twenty two students, and anonymous-survey of four teachers. This means that kinesthetic learning style has been limited for students at the elementary school level. Because of their inexperience, emerging adults often have a difficult time navigating healthy romantic relationships. For many, the skills necessary for quality relationships are usually learned through parents, friends, or mentors. Foster youth, in particular, may struggle more in developing and sustaining romantic relationships due to the lack of or inconsistent parental guidance or mentoring. To address this, I have created a two-hour lesson for emerging adult foster youth attending Hartnell College in Salinas, California. The content will be comprised of the characteristics of a healthy relationship, role-play scenarios, identifying unhealthy relationship behaviors, and how to use healthy relationship behaviors.

Often, elementary school curriculum neglects to include nutrition education. Because nutrition education does not receive much instructional time, students may not learn about proper nutrition, which may make it difficult to lead a healthy lifestyle as they get older. According to the Centers for Disease Control and Prevention (CDC) (2014), during the 2011-2012 school year, 52% of districts required some type of skill-based nutrition education, while only 35% required a curriculum be provided for each grade level.
