The 2019 novel coronavirus (COVID-19) outbreak, which originated in Wuhan, China in December of 2019, has impacted nations all over the globe. Given the health disparities which existed within the United States prior to the COVID-19 pandemic, this pandemic continued to pose a significant challenge to the health of the public. The aims of this research study were twofold: (1) to analyze the incidence rates of COVID-19 among different racial and ethnic groups within the United States and (2) to describe the occurrence of diversity within medical texts. The COVID-19 global pandemic disrupted the traditional ways of providing global learning to students in higher education, and offered international students new opportunities to develop intercultural competency in a virtual environment. Anchored in literature, teaching reflection, student reflection, and critical global citizenship education theory and practices, this article analyzes and discusses the andragogic, cultural, linguistic, academic, and technological dimensions of providing meaningful and inclusive global learning and engagement to international students in a virtual/online environment. Pedagogicon Conference Proceedings

A student panel discussion and reflection on revising an assignment from a simulation to an experiential learning activity will be presented. Student facilitators represent several majors and levels of undergraduate experiences which also allows modeling for roots of interprofessional collaboration. Students as teaching partners increases awareness of diversity and disability culture on the EKU campus.
