The 2020 Dietary Guidelines for Americans now include recommendations for infants and toddlers. Extension educators can use these expanded guidelines to provide feeding recommendations for caregivers of infants/toddlers. The purpose of this study was to explore 1) the infant and toddler feeding topics that Extension educators discuss with caregivers through formal curricula and informal conversations, 2) educators’ perceived barriers to teaching and discussing topics with caregivers, and 3) the optimal format of resources for educators and the communities they serve. Findings from this study confirmed a need among educators for infant/toddler feeding programs and resources offered through Extension.

Polycystic Ovary Syndrome (PCOS) is an endocrine disorder affecting approximately 4 – 20% of women worldwide. It is associated with insulin resistance, fertility problems, and an increased susceptibility to chronic conditions through multiple inflammatory pathways. Women with PCOS are also at increased risk for disordered eating. The Mediterranean diet is associated with decreased inflammation and risk of chronic conditions, and intuitive eating principles are associated with decreased disordered eating patterns. Objective: Dietetics education transitioned to competency-based education (CBE) in July 2022. Despite its benefits, managing competencies may be a challenging aspect of CBE for dietetics program and internship directors (PDIDs), yet it is unclear what specific aspects of competency management are difficult. Using design thinking, this study sought to capture the impact recent CBE implementation had on PDIDs by identifying specific pain points (i.e., challenges) related to competency management. Background: Heart Failure is a disease known to affect nearly 6.5 million adults in the United States. Characterized by recurrent hospitalizations, heart failure significantly contributes to morbidity, mortality, and healthcare costs in the United States and worldwide. Because malnutrition is prevalent in the heart failure population, healthcare providers must perform nutritional assessments on admission to intervene in the case of malnutrition, prevent deterioration, and improve patient prognosis. Revisiting The Master Food Volunteer Program: Examining How To Enhance Nutrition Education In The United States, Stacey Viera, Lindsey Haynes-Maslow

America’s diet-related illness crisis intersects with a lack of nutrition literacy, nutrition security, and systemic inequities. The Cooperative Extension Service’s (CES) national infrastructure could potentially provide equitable access to quality nutrition education in the US utilizing a Master Food Volunteer (MFV) model. This research brief examined preliminary evidence for the MFV model as a support for CES agents and paraprofessionals, and results show a paucity of evidence. Further research and a pilot program with pre-established measures for health-related knowledge and behaviors could elucidate the model’s potential to increase equitable access to evidence-based programming, nutrition, and implementation guidance.

Fifty-six percent of school-aged children participate in team sports, yet there is limited evidence on how participation in youth sports impacts the dietary behaviors of participants and their families. Our team surveyed parents and caregivers of children participating in recreation league youth sports (n = 178) to assess the foods and beverages offered as team snacks and factors that influence team snack choices. Juice was the most popular beverage, and crackers were the most popular snack reported by parents. Convenience, followed by cost and child preference, were the most frequently reported factors influencing team snack choices. Survey items also included …

The study examines the prevalence and causes of childhood obesity, including genetic, environmental, and behavioral factors. Four posters were created with the intent of providing adolescent athletes, their parents, and their coaches with information about important topics in sports nutrition including a general overview of nutrition goals, hydration strategies, recovery nutrition, and nutritional considerations for vegetarian and vegan youth athletes. More people are acquiring their nutrition and exercise information from social media accounts called fitspiration. Analyses of fitspiration content have found the focus to be on restrictive diets and excessive exercise that’s appearance driven. Although its intent is to inspire its consumers to change their lifestyle, many speculate that it brings upon negative body image and induces guilt. Abstract: The purpose of this collective case study was to explore the diffusion of interprofessional education (IPE) in response to specific Future Education Model (FEM) Graduate Program accreditation standards and performance indicators. Data were collected via semi-structured interviews with a purposive sample of 12 FEM program directors from geographically diverse US states. Website and document review were triangulated with the interview data, and Roger’s Diffusion of Innovation (DOI) was used as a theoretical framework to add dimension to the study. Stakeholders sought to reduce the burden of preventable diabetes among adults in Utah via a “Food as Medicine” webinar series. The “Food as Medicine” webinar series sought to increase awareness of and enrollment in public diabetes programs. Evaluation results from the webinar series indicated an increase in awareness of diabetes programs and nutrition information needed to improve personal diabetes management.

CBH is a comprehensive nutrition curriculum designed to teach adult SNAP-Ed participants how to eat well and be active on a budget. CBH combines nutrition and physical activity recommendations from United States Department of Agriculture (USDA). Each lesson has three components: a nutrition topic based on the current Dietary Guidelines for Americans, a physical activity discussion based on USDA recommendations, and a Create recipe demonstration and sample. The components are woven together in eight lessons that are designed to keep participants engaged, while actively learning the skills needed to create a healthier lifestyle.

Because FCS agents teach communities about dietary guidelines, it is important that they are aware of the latest nutrition research. This study assessed FCS agents’ knowledge of popular fad diets (low-carbohydrate, intermittent fasting, detoxes and cleanses) and their potential adverse effects, and its relationship among location, certifications, years of experience, professional association memberships, and education. Agents in Louisiana, Texas, Arkansas, and Mississippi were emailed a survey. RDN, DTR, and CHES certifications had significant associations (p = 0.03) with knowledge of adverse effects of fad diets. Agents who hold these credentials may have more knowledge about adverse effects of fad diets.

Basic Needs Initiative at California State University, Monterey Bay is a department that provides students with food, housing, and wellness resources. Over half of the university's students experience food insecurity, and over 85% use non-academic resources to learn about nutrition. This project adds a dietary health section to the department’s website to increase students’ access to nutrition education. It addresses the micro-level agency problem that too few students eat a healthy, balanced diet. Introduction: Nutrition professionals face implementation challenges due to their lack of knowledge to incorporate D&I science into intervention design. To improve intervention outcomes, nutrition professionals must be trained in D&I science, which are currently absent in the field.
Aims: To identify and assess nutrition educators and practitioners perceived motivations, self-efficacy, and attitudes in using D&I science to inform the educational design and strategies of a nutrition-specific D&I curriculum for nutrition educators. The need for food assistance increased by 300% among Utah families as a result of the COVID-19 pandemic. Farmers and ranchers were also adversely impacted by market losses and processing shortages. Background: Forty percent of the US population ages 20-39 are categorized as obese,
their BMI is over 30, and 35% of college age students are obese or overweight. Issues related to obesity cost the US $147 billion annually. Between 40%-50% of college students are reported to be inactive. Inactivity can lead to increased morbidity and mortality related to increased risks of cardiovascular disease, diabetes, hypertension, musculoskeletal issues, and depression. With the ongoing COVID-19 pandemic causing college campuses, restaurants, and businesses to shut down, many college students found themselves having to return home or find alternative food resources. Due to these factors, it was imperative to examine how college student’s eating habits have changed throughout the pandemic, dealing with lots of stressors, and whether having prior education on nutrition influenced those eating habits. The purpose of this pragmatic mixed-methods study was to identify the factors that impact a nutrition professional’s preceptorship decision and potential solutions to combat preceptor shortages within accredited nutrition and dietetics programs. Homan’s social exchange theory provided the theoretical framework that if perceived costs of preceptorship outweigh the perceived benefits, then the activity will cease.
Phase one of the study included an online mixed-methods questionnaire. Phase two included a qualitative focus group and interview with self-identified volunteers from phase one. Megan Kaser, a recent 2017 alum in the College of Health and Human Sciences at Purdue University, describes her experience with Give Hope, Fight Poverty (GHFP)—a nonprofit organization in Indianapolis, Indiana. She is currently pursuing a master’s degree in physician assistant studies. GHFP’s mission is “to foster philanthropy domestically by designing service-learning programs that engage U.S. college students with rural communities in Swaziland, Africa, and work together to educate, empower, and lift orphaned and vulnerable children—particularly those living in child-headed households— out of poverty” (Give Hope, Fight Poverty, n.d.). The goal of this club was to inform and build upon the knowledge about health and nutrition of 4th and 5th graders. We did different activities to engage the children in a fun way of learning about health and nutrition so that it wouldn't feel like an extension of school.

Philosophy Department Student Scholarship
Our goal with the present proposal is to bring modifications to the dining experience in Kimball Hall at the College of the Holy Cross, so to encourage a more well-rounded approach, which would best represent the values of continuous learning and education of the whole person and reflect the mission of the College. In order to meet these goals, we recommend five changes to Kimball dining , which we plan to implement during the Spring 2017 semester in collaboration with two Montserrat seminars.
